They had to replace or "enhance" the items and dishes that earned them the star in the first place

Honestly I've eaten at many Michelin stars over the years (as you'll see by my channel) and I can definitely say some of the 'world number 1' restaurants have been a total sham. Often food bloggers have a vested interests in certain restaurants and I've had at least three 2 or 3 Michelins that have been SO different compared to other 2 or 3 Michelins in another country... this includes everything from quality of food to service, ambiance and price. I can immediately understand the vibe of the place, how happy staff are to work there, how they react to my filming there... the really top restaurants will welcome you with open arms, the nervous ones will not.

The 1st star is vague. "Good in its own catergory". The last 4 words can mean many things. The 1st star should not be taken really seriously
On the other hand, the 2nd and 3rd star is more specific. "Worth a detour" and "Worth a special journey" or sth similar respectively
Dont forget that the simplest 3* dish is potato, butter, milk and salt by the well-known chef Joel Robuchon.

In my opinion one star in France is superior to the same rating abroad. I think it's the national touristic quality standard. So I am asking for an explanation why they got only one star and they're able to tell me exactly why. Others are loving the genuine quality of the Spanish tourism even if not rated. But they may tell you their comparison terms precisely. Like authenticity, value of investments and uniqueness.
I also might tell you that there is no doubt a difference between a French stars restaurant in Germany , Saarland, and the same rating restaurants in France. Simply because that they are French restaurants in Germany.

Went to the only 2 star michelin restaurant in Beijing after the michelin guide came out. Name was Shanghai something.
Extremely disappointing. More affordable than expected but much more expensive and what the servers recommended wasn't better or worse than what I had at other local Beijing restaurants. Not to mention the plating was awful. One dish was just peas and mushrooms stir fried together and it tasted no better than frozen peas from a bag. Another soup was watered to hell and had half of a sliced carrot and half a slice of corn and a bite sized slice of beef. The main dishes were braised pork and beef. It was good but not so good that their labeled price was worth it. When they brought the soup I had intended to share it with a friend and asked for a bowl. They brought the bowl but no spoon and only gave us the spoon after about 5minutes. Mediocre service, passable dishes, awful plating. Hardly the michelin experience you'd expect.
Truthfully after that experience I realize the Michelin is just a label. Michelin inspectors are human beings with bias and different palettes from one another. They really are not much better than yelp reviews.

Instead of one chef working 70 hours, why don't two chefs team up and work 40 hours each?
To me it doesn't seem to be Michelin that forces such a life-crushing workload upon the chefs, but their perfectionism which renders them unable to share responsibility.

they do have sous chefs, but a chef cannot work with another chef of the same level, it's like if Da vinci and Michelangelo worked on the same painting, something that is impossible, because each artist have a different idea

allenamenbesetzt the simplest answer is money. It becomes very expensive to house not only a GM and an exec chef, but two is too much. Creative differences can also be an issue. But from personal experiences working in kitchens it can be done. Even at Michelin star level. It’s just rare.

the star is not just the food.. the service and waiter must had class.... not some shitty part timer... who only care to get paid and tip... they also take away.... some japanese one in tokyo... the one that Obama go to got taken since they or do reserved.... you can not had a star if you can not walk in...
it not longer about marketting but they care about history....

    • @Embargoman
      @Embargoman 4 года назад

@@campkira The service and also the time taking to be their and dedication, so the marketing scheme is to people to buy Micheline tires, as their are other tire manufactures out their; just the name alone is to set up that people could drive all over town to wear out their tires to only buy their products Michilne tires also Michilne owns BF Goodrich.
That is something to just go and say let me buy BFGs so BF Goodrich is owned by Michilne, but the concept is good to see it that way.

  • @arx754

Before they take a star away, Michelin inspectors should go back a second time to a restaurant. If I was a Michelin inspector, I'd do that even if it meant I didn't tell Michelin that that is what I did. As this video shows, too much is at stake if they don't give a restaurant a second chance. SO WHAT if some wealthy people, eating at a one or two star Michelin restaurant, don't get one of the dishes they order cooked to perfection on a particular night? Human beings are putting the food out and not machines.

This is odd that a secretive evaluation system that
can't possibly vetted by a third party whether it is valid or not just calls for trouble. I don't think the founder of the Michelin guide expected people to kill themselves over a rating. That is the danger of a secretive evaluation system that couldn't vetted by a third party.
