------------------------------
FOR THE PORK
- 3-4 pound pork loin roast
- 2 tablespoons kosher salt
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 1 teaspoon fennel pollen (or 1/2 teaspoon ground fennel seed)
- 2 teaspoons Herbes de Provence
- 2 teaspoons garlic powder
- 1 teaspoon ground black pepper
FOR THE CITRUS GLAZE
- 6 ounces apricot preserves
- 1 tablespoon orange zest
- 1 tablespoon lemon zest
- 2 tablespoons orange juice
- 1 tablespoon lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon brown sugar
FOR THE PORK
Preheat oven to 325 degrees.
In a small bowl, mix the salt with the lemon and orange zest until they come together in a uniform texture.
Add the fennel pollen, Herbes de Provence, garlic powder and pepper, mixing until combined.
Rub all over the roast.
Transfer roast to a roasting pan or a 12-inch cast-iron skillet. Roast in preheated oven 1 1/2 hours to 2 hours or until the meat registers 170 degrees.
Remove from oven and tent with foil while preparing the sauce, approximately 15 minutes.
FOR THE CITRUS GLAZE
Stir all ingredients together and bring to a boil. Once boiling, reduce to a simmer and continue to cook for 10 minutes until reduced slightly and thickened.
Slice roast, drizzle with sauce, and serve. The juices will redistribute in the roast during the resting period, making a perfectly juicy roast.
I wonder if that rub would work in a ginger ale marinade? I'm worried if the pollen would clash with the ginger ale. However i will use that rub for the roasted fennel I plan to serve with the pork.
Kaleb would you mind sharing your source for fennel pollen? This recipe looks delicious!
I always do a picnic ham for Easter, but now I'm thinking a Pork Loin Roast ! That glaze looks heavenly, loving you in yellow......thanks Kaleb Happy Week-end :)

I have some cherrywood smoked sea salt, and some licorice smoked sea salt. I bet both of them would be good in the rub. I also have some Aleppo pepper.
Oh my gosh! It's on the menu!
Yum....... 🍊🐷🍋🐷🍊🐷🍋🐷

This roast looks so good. I'm definitely doing ham for Easter but who says I can't make this the following Sunday, right? Besides, I can't remember the last time I made a pork roast. I can almost smell those wonderful aromas..Thx Kaleb!

Wow! Looks amazing!!! I am for sure going to try this. I make pork tenderloin roasts on busy weekday evenings because they take less time in the oven. Would this rub work for the tenderloin roasts even though they are only in the oven for like 30 mins?
Very Nice 👍 😍
