You can always choose the trick direction (up down left right neutral), but the available animations depends on the type of trick ramp. High ramps give different animations from low ramps!

That's actually based on the height of the jump! If you go off a big ramp, and will have a lot of air time, or you go off a medium jump in zero G, then you're more likely to do those animations. They can be cancelled bu holding down or up, but those animations will still play if you trick right or left!
This decade old game is so well thought out in its design it's insane. This is why Nintendo never fails to impress me; they don't just get detailed, they get DETAILED.
I actually noticed this aspect. I even learned that by doing what I coined as a "flip trick" (holding your stick vertically in either direction, it cancels out your "antigrav trick" (a trick done that can only be done in antigravity) I've learned a bit too much about miscellaneous trick facts in MK8DX. I could honestly talk about like 3 more about the animation that plays.
Believe it or not, I actually learned about this outside of Mario Kart. There is this game I got from PS Plus when it was free called Team Sonic Racing, and it had a lot of similarities to Mario Kart, and the tricks was definitely one of them. When I first played Mario Kart Wii and every other Mario Kart game that came after like 7 on the 3DS and 8 on the Switch, I thought the tricks were just for extra boost and just to look cool and nothing else. But when I played Team Sonic Racing, I noticed that the way you do tricks in that game is slightly different from Mario Kart. In Mario Kart you just push a button or shake the controller, while in Sonic Racing you have to move the right joystick (R3 since I'm on PS4). That was when I realized that the direction you push the joystick determines what animation will the trick be. Example: You push the right joystick forward or backwards, the character and the Kart will do a flip, and if you move the joystick to the side (left or right), the character and vehicle will spin around sideways. With all this in mind, I then realized that depending on what trick I do will be the direction I'll go when I land, which is why I founded myself struggling to make turns when I did the wrong trick, and why I turned corners so flawlessly when I got the right one. When I went back to play Mario Kart, I decided just for fun to try out the trick philosophy Sonic Racing taught me, and to my surprise it worked exactly how I would have expected it to work. Even in previous Mario Kart games with tricks like Mario Kart Wii you can use directions to do tricks and change the way you move when you land. I just wanted to comment how funny it was that I learned what I guess is supposed to be a common knowledge Mario Kart strategy OUTSIDE of a Mario Kart game and instead I learned it in a knock off Mario Kart game. Don't get me wrong, Team Sonic Racing is solid, but we all know Mario Kart will always be the greatest.
I play in division 6 out of 21 of Mario Kart Universal, I am high gold 2 in Lounge (ranked Mario kart) and I still don't completely pay attention to this kind of details.

I think the best part about Mk8d is you can pick this stuff up and subconsciously take advantage. I realized watching that I always trick to the right on the ramp used an example but never thought about if it is changing gameplay or the race. Now I know, kinda cool.
I been experimenting with this since this video has come out. Here’s what discover. 1. Make sure you don’t accidentally keep your thumb on the stick when you do the trick cause then the turn is too tight and you might accidentally drive off the track. This happened on 3DS Rainbow Road. Lol 2. If you trick and press down, you will do a back flip. This is typically slower than the other directions, but if you are playing on 200 cc, it can help with slowing down for some of those sharp turns.
Back in my day comments would tell us what was left out of here, so I'll do it myself If you're underwater, up tricks and down tricks delay your boost. This is better, because if you boost through water but not on the ground, you'll go slower than if you were on the ground underwater. If you fall for too long and the boost comes out before you touch the ground, charge a mini-turbo instead.

No, just the trick direction. Either you spin up, right, left, or down depending on which direction you were holding
