how are you doing the different signs without opening the menu to change it? is this a new setting or is this only a thing for keyboard?

Press numbers on the keyboard or move between signs with the mouse's spin wheel

To use it, hold right trigger and then press the corresponding action button (except for Igni, igni is left trigger by default).
