Also they use a high protein flour of 13 to 15 percent protein. They dip in a water bath before flour. Double dip for extra crispy. The original recipe double the spices in the flour mixture. What truly makes a difference in the taste is white pepper,Tellicherry black pepper, saffron, ground mustard powder, powdered sage, ground ginger, celery salt, McCormick paprika (regular not smoked not sweet) Accent (msg/ vitamin K) (this is in the batter and the marinade) onion powder, garlic salt. These are the important spices that give it the flavor people love. It’s where the umami flavor comes from. You can add others if you want. She said it doesn’t have oregano nor thyme. She always marinated one of two ways. Over night butter milk for “old fashioned style” But in the 1930 this was costly. She also used water and baking soda. (4 hour) Pat dry before your wet and dry batter. Rip Granny Gertie. Miss you so much. And your chicken. Hers was the best! She called it gas station chicken. I still have her hand written recipes from the 1930s in the original tin box. My most prized possession. After the restaurant was sold they stopped using saffron because of the cost. It created a law suit. So if you want the real deal use the spices above.

My dad worked at a kfc in high school. This was around the time the Colonel would randomly visit kfc’s unannounced and rate their food. He usually ended up yelling at the manager for how badly they butchered his recipe, and he particularly despised the gravy. My dad happened to be off that day so he just missed him. I never knew what his opinion of that kfc was, but it closed down decades ago so that should tell you something.

The closest I've gotten to KFC chicken is by mixing LAWRY'S SEASONED SALT into my flour. Of course, I marinate the chicken in buttermilk. That's it. Dredge and fry once for original, Dredge twice and fry twice for extra crispy.

My dad worked at a kfc in high school. This was around the time the Colonel would randomly visit kfc’s unannounced and rate their food. He usually ended up yelling at the manager for how badly they butchered his recipe, and he particularly despised the gravy.
My dad happened to be off that day so he just missed him. I never knew what his opinion of that kfc was, but it closed down decades ago so that should tell you something.
