  • If you can't seem to get your knife sharp, it might not be because of your technique. There are other factors in knife sharpening, which play an important roll in how sharp a knife can get.
    In this video I talk about the importance of knife steel and sharpening stones and some common mistakes beginners make when they first start sharpening. Hopefully this video helps. Be advised I don't go ever EVERY aspect of of knife sharpening in this video. Just some simple tips for the beginner. Thanks!

    Thanks man--your videos are clear, common sensical and easy to follow. I've been making knives as a hobby for about 25 yrs--but have never learned the knack of sharpening--thanks to your videos --now I have hope. Also, your cutting tests are REAL WORLD tests and give us facts and really useful information that you've learned through personal experience ---you don't just parrot an opinion about a particular steel after looking at its composition.

    I am 64 now. My dad used to sharpen our kitchen knives on the type of free standing stone you show in this video. When I got older and on my own I tried to copy him on the same stone he used but was never able to get that angle consistently right. I purchased a system called the Edge-Pro Professional and can now easily get a twenty-one degree angle every time. It's that accurate.
    If the knife won't sharpen or won't hold an edge, I know it's not me, It's the knife. In addition, I now sharpen knives for ladies at church, a few bakeries, and butchers and the system I purchased has now paid for itself. So basically, I got it for free and now I don't have to pay someone to sharpen my knives and I can now do it better than any of them ever did.
    I give guys that can sharpen a knife free-handed a lot of credit, it's a real skill and talent to be able to do it that way.

      knives like that Schrade , ur probably just to thin on edge angle for the cheap steel.. this is where FIXED ANGLE sharpeners come in handy .. i could always get ANY piece of metal sharp enough to CUT.. but since i invested in a WICKED EDGE , i get LASER SHARP , BEAUTIFULLY FLAWLESS MIRRORED EDGES .. if u buy CRK , Hinderer , Strider , etc. knives then a QUALITY sharpening system is worth its weight in gold 🤘🏼

    • @madthumbs1564

      'just to thin on edge angle for the cheap steel' - I'd say softer steel. There's also metal fatigue to factor in.

    Good points. I've found the 'start with a coarse stone' point most helpful. Lots of sharpening guidance assumes you are just maintaining an edge but there are more cases where the edge is totally lost and needs to be reground. In those cases a super coarse stone is your friend. I have a coarse diamond stone that works great but before that I used 60 or 80 grit sandpaper. Coarse emery paper also works well but it dulls quickly.

    • @OUTDOORS55
      @OUTDOORS55  6 лет назад

      Yeah I think most people who are learning have very dull blades. Coarse stones save a lot of work. 🙂

    Thanks for the info, my grandpa gave me the same old timer that you have in the video and I never could put a decent edge on it and now I know what the problem was.

    • @megastick9324
      @megastick9324 3 года назад

      Maybe, I have several, ok, a lot of old timer and uncle Henry knives, they are fantastic . They take and hold an edge perfectly.
      It could be the steel itself. Schrade steel has ( before they went to China) a high carbon content, you sharpen them a little differently than stainless. So many people have gotten used to stainless knives they don’t know the proper way to sharpen high carbon.
      The instructions that came with the old Schrades explained it.

    Glad I found this, I'm going to get a coarse stone I think. I have a 6" Smith's Arkansas stone and ever since my Ontario Rat 2 D2 steel come in I've had no luck sharpening it. I've had it for about 2 weeks now.

    • @mfreeman313
      @mfreeman313 2 года назад +1

      I like Arkies and that Smith's is a pretty good cheap stone, but only for softer steels. I tried a folder in 9Cr18MoV on it the other night and the blade just skated around. It cut a little but I gave up trying to raise a burr. For D2 try a Norton Crystolon combo, 120/320.

    Really like the fact that you bring up the quality of steel being sharpened, so many videos on this subject mislead people into believing that you can get a razor edge on some cheap low grade metal and the only thing that matters is technique. The Spyderco Tenacious is a great knife at a really good price point, I have been using that blade for a year and a half and only occasionally have to hone it.

    This was actually really useful. Im just getting into freehand sharpening and I was trying to use a really shitty junk knife just to practice with but I couldn't get the edge to form a burr. I examined the edge and could clearly see that the scratch pattern went all the way to the edge but I just could not for the life of me get it to apex. After watching this I decided to bite the bullet and give it a shot on my chef knife. Sure enough I got that blade to apex. After two stones and a strop I got it to pop a couple hairs but not quite actually shaving. Need more practice.

    1000% agreed on the Schrade! I've got almost an identical one to yours and it just will not get sharp. I know it's not technique because i can get most blades to easily "pop" hair off my arm.
    Probably the worst offender in this category is the blade on my leatherman wave. I finally took it out and just ground a new bevel on the bench grinder with that one...

    Another excellent video with great information. Early on, I figured out, thanks to one of your videos, that I was destroying my good edge on the strop by using the same angle I sharpened at. The thickness of the leather allowed my blade to sink in a bit and it quickly rounded off my nice edge. So, by holding it at a lower angle on the strop, I can now shave with it. Thank you for all of the excellent information.

    I have two of the schrades that you tour as having bad heat treatments. Granted they are about 20 years old but they have both been my go to hunting knives all these years. They have always took and kept the best edge I ever had. My hunting buddies always are stunned when they see my knife cutting hairs in half rather than pushing them aside while gutting deer. I have gutted 5 deervin a day without resharpening it. And that includes chopping through the pelvic bone on all of them. Every maker I am sure let's knives get though quality control at times. Apex on the coarse: Good advice. To which I would add apex on X-tra coarse dial-sharp diamond hones: They mellow out and most importantly they stay flat. Also run the edge somewhat lengthwise to avoid rocking, then sideways, very lightly, once or twice at higher angle, to break off the burr on finer grit.

    I'm always missing that last bit of sharpness when sharpening freehand. Whenever I switch over to the Sharpmaker it needs a maximum of 5pps to give me a hair-popping edge. What could be the reason for this? I sharpen edge-leading. When the edge doesn't reflect light anymore, I start doing alternating passes with maybe 1-2° lifted angle.

      Haha yeah I've experienced the same thing. The knife manufacturers quality control is super important. Even a $7 knife is capable of getting shaving sharp with a good heat treat. How well it holds that edge is a different story lol.

    • @seanyoung8355
      @seanyoung8355 2 года назад

      That's because it's a crap blade and you aren't being consistent with your angle. Also people have a bad habit when they near the end of their sharpening stroke as they lift the blade off the stone they actually roll up onto their edge effectively wiping the burr they just created right off the blade. When you lift the blade off the stone roll the blade towards the spine of the knife lifting the edge clear of the stone so you dont kill the edge you just put on it.

I know exactly what you mean!! Did it last night again and nothing. Sooo frustrating! Has to be the knife for sure! My Makarov is shaving sharp only a few strokes on the strop and it's back in business again but this CRKT is crap! Thinking to get spyderco, most collectable knife there is!

    Mark the knife secondary bevel with a Sharpie type marker so you can see if you are removing steel up to the very edge and also keeping the right angle. Check for improper heat treat by seeing how much a fine file will scratch or cut it. Use a piece of unhardened steel as a baseline.

    Good explanation of crap steel. I recently got a fillet knife from my boss who wanted me to sharpen it but I couldn't get it sharp.
    I gave it a really toothy edge and that's the "sharpest" I could get it.
    I told him don't expect much from this it's probably gonna dull as soon it touches something. He gave me a buck knife with that filet knife too and it was a noticeable difference between the two steels. The buck although cheap actually was heat treated properly and took a keen edge.

      Yeah I've experienced the same myself. Even heard of some super steel knives with poor heat treat that couldn't be sharpened even on an edge pro. Lucky spyderco admitted it was poor heat treat and replaced the knife. Thanks for the comment 👍

    Thanks for your videos. It gives me motivation to try my Buck Woodsman again one day. It has never been sharp in its life. I can sharpen my kitchen knives so they slice through atoms, but that Buck can only cut through warm butter.

    I can’t believe it, I totally have an Old Timer knife, and wondered why it wasn’t working as well as day 1!... Thanks for the explanation, probably time to invest in something better! 🤙🏼😂

    I had an old timer as a youngster and paying a reasonable price for it could not understand what was wrong. Later got a buck 110 but was afraid to try to sharpen it, for fear of the same end result. Some things have changed for the better. Am a big s35 vn fan as it stays sharp and is easy to resharpen.

    Alex - love your videos, thank you so much for sharing! I have a question - I am sharpening a Cold Steel Carbon V folder and can’t seem to get it any better than taking off a few hairs with a bit of effort. I have sharpened using the Gatco system as well as done it free hand following your advice, and it just won’t get that shaving edge. I know of two times that I did get it in the distant past, but am having no luck now. Any thoughts or tips? Thank you again!

    You video was very good and informative. One thing I would add and is a problem I have found over the years. Is that some knives are just to hard for the stones someone may be using. I have had gatco and lanski kits that the stones just were not strong enough to handle and put an edge on certain knife brands. Because the steel is stronger than the stones.

    • @OUTDOORS55

      Yeah that can be true in some situations. Especially considering all the so called "super steels" out there now. Thanks for the comment 👍

    Now I know. I have a moderate priced kitchen knife that I just can't get sharp. Now I know that the type/quality of its steel, and/or heat treat, may, is, the cause.
    Thanks.

    What are your thoughts on the spyderco delica 4? and vg10 vs zdp189? I have a zdp 189 that came crazy sharp, after accidently scraping it against concrete i noticed i messed up the edge and decided to take my worksharp to it. I was never able to get it shaving sharp again. I now have a diamond DMT Diafold Course / Fine sharpening tool. I was trying to reflatten the sides of my concave edge and got it shaving sharp again but after using a wet stone 1000/4000 to get it smoothed up I must have dulled it again. It is still pretty sharp and cuts paper and anything else just fine, edge retention is wonderful, but it won't shave super easy like it did when i had it brand new. It's driving me nuts but i don't want to keep grinding away this zdp steel just for that ONE thing when everything I do use it for it does just fine with the edge i was able to get. Help.

    all this talk about old timers..made me go and find mine. in 1970s friend owed me 10 bucks ... ln trade...,gave me a old timer sheath knife 6" 150t schrade-walden ny usa 1/2 " broken tip...fixed it up ,had it ever since.. sharp,holds edge,easy to sharpen..rusts,must be carbon steel.. not a fancy yupie flatlander knife.... but to me it is a quality cutting tool....a keeper for sure....good job on your video

Still takes a hair shaving edge and its gonna be passed on to my children someday😉😉 they dont make em like they used to!!!!

    Another excellent video! For a beginner would you recommend buying a strop or trying to DIY it? Do the manufactured ones offer any advantages?

    • @OUTDOORS55
      @OUTDOORS55  6 лет назад

      It really depends on your budget.. diy will save some money but only about $15. The knives plus stropblock i think is only $24. It also lasts for a long time. I think diy is good if you really don't have an extra $15, or you don't have access to a good strop manufacturer (some people don't, so I've heard). Buying one takes all the guess work out of finding the correct compound as well. Honestly, at some point, you'll end up with both😉

    So funny. I'm trying to sharpen this lock blade knife I have which has always been not as sharp as its brother. In frustration I asked you tube what I'm doing wrong and your videos as the first video I found. Your example of a bad knife.... the exact knife I'm trying to get sharper. Schrade Old Timer with 7 OT on the Blade.
    I have a Schrade OldTimer skinning knife that is way sharper and holds a nice edge. I figured since both were Schrade, I'd be able to get both just as sharp. Thanks for your video. I'll just accept this is how it will be.

    This helped a lot. I tried to sharpen a 440 Stainless knife I got at a flea market. I even used a sharpie to make sure I wasnt messing up the angle. No grit and no amount of time gave it a sharp edge whatsoever. Shoot even on cource I had a hard time even getting a burr. I am thinking now it must just have been a poorly heat treated knife. Looks like online its some nobody chinese company and they sell for $13.

    Thanks Alex, good video for beginner knife sharpening. I agree, good steel with GOOD Heat Treat is key. So so steel with good heat treat is also okay. The stone being toooooooo fine to easily get to a burr, good point. I do have one of those hardware store stones. Not sure I would put a nice knife on it but point taken. I am sort of a beginner in the sence I have been using a Spyderco Sharpmaker and other similar sharpening devices and finishing on a good strop. That said I don't want to be limited to that sort of thing. Starting to learn to use bench stones and know I am basically starting over. Will take your advice & start with one of my least favorite (read less expen$ive) knives and a coarser stone. I am new to your channel but will continue watching. Thanks

    The Schrade knife in your video is an Old Timer 6OT. The Schrade + steel was 440A stainless. I actually prefer the 1095HC carbon steel in both of my Schrade USA 7OT's
