Just a tip regarding the trussing, you dont need to use twine, instead, cut a thin hole into the skin just under the bone just before the end joint on one leg then take the other leg and push the joint through the hole. Self holding :-)
Cellofski i think post production messed with the lighting so things seem more orange in color like potatoes that are usually brown and the olive oil looks orange
