What a blessing to have all that fresh venison in your freezers! We went to my in-laws for Thanksgiving and she gifted us a lot of fresh beef (they raise cattle and generally butcher one every fall). We received several roasts, steaks, and at least 20+ - 1 pound packages of ground beef (lean). To buy all that beef in the store would have costed several hundred dollars, at least. So, I feel blessed to have received it. ❤

Seeing Warren with the cat reminded me of my Dad. He would profess to disliking cats, complain about them, but I'd go to the barn to do chores, he would be sitting on a hay bale petting and talking to them. He was also the one who insisted on buying the best dry food for them. He even bought a gravity feeder,,normally used for piglets, that we had to keep full for our barn cats
You have to buy tags for the deer you catch which costs money. It is a great family activity. Shells, guns, blinds, tools, equipment, bags, tape, dispensers, grinder, your time, energy, planning, marksmanship all adds up. It may not add up in dollars, but it is a laborious activity. Nice work. Good skills to teach your children. Memories to last a life time too!

When I got married and for probably 10 yrs. after we used a hand grinder. Talk about a workout. Now we have people lined up to use our meat grinder. Even though I’ve been married to a hunter for 38 yrs. it is great to see what others do with their meat.
We just processed two deer. Not only is it a blessing in the freezer/canning shelves, but a blessing to our farm as well. The deer here (MI) are prolific and can destroy a crop field quickly. We manage our game as carefully as our crops.

I can meat all the time. I would raw pack it , add no water it will make it own juice. 75 minutes in the pressure canner .. number of pound pre pressure for you altitude.
We do the mini roast blackstrap too but I cut a slit in the middle a fill it with cream cheese and jalapeño then wrap the whole thing in bacon. So good!

One of my sons got his first deer last week. My hubs always wanted to take him when he was a kiddo ( 20 years ago) but he is now feeding a family so he was so happy to put meat in the freezer :)

I make both of those all the time and can it. I didn’t notice you do anything I don’t, except I can quarts for 90 minutes. You should invest in a digital canner. I just got one. So worth the money. I skip the jar sanitize and warmer and go straight to canning. It cans everything at 15 pounds. Perfect for you. You just put it in the canner, set the time, vent, then can and walk away. You don’t have to watch it. I like this because when I make something like roast, soups,chili and such…..I just can the leftovers. Really adds to your pantry a little at a time. I like to take my canned beef with beef broth…bring to boil and add egg noodles. Love it! I canned about 40 quart jars of it for winter. Enjoy!
Yay I was hoping you'd show us your deer processing! I got done doing our 2 last week. I did all the trimming , packaging, and grinding myself. I'll be the one cooking it so I cut and packed how I want!

Hope this helps, I can a lot and the only thing I would have done different is on the deer meat I think you need to tighten the rings about an inch more. It takes me awhile to get the jiggle just right and the lids back off some and if they get loose it can't vacuum or the food lodges under the flat. On the stew, I fill to the bottom of the rings with water, broth or tomatoes, potatoes or all veg that are out of the liquid will turn dark . But its just too much air to be able to catch a vacuum and pop down to seal. You don't need to precook anything. Layer meat and veg in a jar raw, add water and beef paste. It will all cook in 90 minutes. I have made all the mistakes more than once in my 45 years of canning alone. All the hype now in the canning groups is Burritos in a Jar. I canned 14 quarts of venison today. Its the same as printing your own money. Work that makes everyone feel good. I have the exact same canner and altitude as you. Seen all your videos and enjoy and look forward to them. Gotta feed the family and it gets bigger which is the best part of the Sunday dinners!
Agree, a bit too much headspace. If you aren’t sure there is a simple tool you can purchase that measures headspace from the top of the jar. I prefer to raw pack my stew as well, and fill with broth

very interesting and informative. i enjoyed it! i grew up in the burbs, not a farm girl at all, but my dad loved hunting and fishing. i learned a lot from him. i know how to scale fish and hunt. my boys learned hunting, fishing and trapping from my dad. they can skin a small animal...i cannot. that was many years ago, but the skills are not forgotten. one of my sons passed down the skills to his sons. you use the entire animal plus feed the wildlife. kudos!
I love watching your channel and yes you do need to can at 15 pounds of pressure if your elevation is over 1000. Also on your stew it didnt look like you were at the one inch headspace. You either need the stew to be right under that last bottom line or add liquid to that line. Its very important to have the correct headspace or they will not seal. I usually dont reprocess for another 90 minutes if they dont seal because the vegetables tend to turn out too mushy and if you do always use a new lid. I hope this helps you and have a blessed day.
I have canned deer meat many year ago it taste like stew beef where we live in North Carolina we use a 15 pound pressure at 90 minutes in pressure canner. I am older than you and have never canned much at all my mom did it and my husband know likes deer I don't like it much at all I like it a little bit but I'm glad you all like it way to go. GOD BLESS you all. The reason you don't pack it tight because it makes it on water. I would do the same thing you did re can my mother-in-law dose the same thing too. Great job.
We use a product called game tame , it is very good especially with deer roast, we have our own beef cattle and hogs also and game tame is good on them. I am glad you tried to keep the bloody mess out, I am an animal lover of all kinds, and deer are one of my favorite because they are so kind and trusting. I do understand the concept of we eat meat and it is from animals, but for me it is a ruff road for me. I was a vegetarian, then 20 yrs later I eat meat and it is good. But I do feel guilty. So any hoo Thank you for keeping it tasteful. I also wanted to say I love your cookbook ,so easy to make things and good too.
When I was a kid my family always butchered our own meat. We did venison,beef and pork every year. I think I was around 6 when my dad started teaching me how to cut up meats and how he wanted it to be done. I really enjoy doing it. One year I was pregnant and my mom was afraid I was going to be sick from the smell of the blood, I never did. I haven't had venison in years and years but still cut a lot of my own meat. I will buy big roasts and cut them in steaks and pork chops. The only thing with growing up on fresh meat is store bought stuff just doesn't taste the same.
Have you ever made stock from the bones? From reading and watching chefs' books and videos, restaurant kitchens use "demi-glace" for sauces and gravy. It's roasted venison bones that are simmered with roasted onions, celery and carrots. Then it's covered in water and simmered for a long time. After that, I think they reduce it until it gets thick. Apparently, it freezes well and they use a few tablespoons to make a sauce or gravy. It's sold in some grocery stores, but it's very expensive. It sounds like a daunting project, but if you're home all day, you could just keep an eye on it while homeschooling or doing your regular routine. It sounds like that expensive stuff in the jars. Just an idea.
What a great video showing real life. I've processed many deer, elk, and even a bear. Boy is it a lot of work. I perked up a bit when I saw Warren with the backstraps and spotted the knife between them (at about the 15 minute mark). It was the Western and I have a full set of those. You can thicken up a stew when canning by using cook type ClearJel. It's designed to withstand the high pressure needed in canning and it works great. I've used it in pie filling, stews, and even sauces that I've canned. I don't use things like that until I've done lots of research on it beforehand. Just passing on information that might be helpful in the future.
I really enjoyed this and the whole family pitching in. It does take a few people to process a lot of meat. I am the only daughter in law that never minded to step in and help. Poor girls don't know what they are missing.like job well done when finished. May have to try some ground venison in the future. Tried a few jars of canned venison last year. Processed nicely. I found the box of 60 eggs at Walmart are cheaper than aldis eggs lately, also the crisp are great broken up on salad too, i love watching the hauls it surprises me how some things cost more there than here in NY.
We forgot to pack up cranberry sauce when we made our Thanksgiving plates to take home. So with dried cranberries I made a cranberry sauce. I added a couple handfuls of craisins, a big splash of apple juice, couple spoons of orange marmalade, sugar, and pinch of salt. Boiled it and used meat chopper to smooth the cranberries to release pectin. It was sooo good!!!
My husband ended up getting us 3 does this season! One with muzzleloader and 2 during gun season. I hope he doesn't get a 4th one (the bag limit) since our freezers are totally full!!!
Harvesting deer is necessary for the preservation of the species...ethical hunters should never feel like you have to explain yourself. Enjoyed this video. We live in SW Missouri and my guys are avid hunters we love " deer meat" (that's what we call it)...we had fried back strap Saturday night . Delicious!! We let the wild life have the scraps...
We are processing venison and elk this week also. From Oregon. Have you ever vaccum sealed your burger or roasts, back strap etc? That is how we package ours. 4 deer and 3 elk. Good video!
The Miller High Life is my Dad's preference of beer. He does live in Wisconsin and can get it there. Here in MN at least in the area I live...all the liquor store owners say they no longer can get it.

Great video!!! We are an avid hunting family but my husband is not a fan of ground venison so instead that meat gets taken to be made into venison cheese hot dogs and a few other things. Have you ever rendered down the fat? It makes a fantastic face/body lotion and/or soap!
Cold water is best for helping bleach be its most effective. Hot water diminishes its effectiveness, but for your cold weather and avoiding frozen fingers, a room temp should be fine. In a restaurant we wash, rinse and sanitize for 10 min (200 ppm) 1 teaspoon/ or 5ml for every 1 liter of water. And pull out to air dry.

As a mom of 9 and having had split open wounds, forehead, chin and eyebrow, you can use (as aproved and used by and ER doctor) super glue. Flush with saline, (maybe follow with iodine) and clean edges as well as possible and drop several drips into wound and use a butterfly bandage to brace edges of skin bringing the injured tissue together and will heal, let scab and heal, and you can use mederma after scabbing is finished usually in about 2 weeks.

very interesting and informative. i enjoyed it! i grew up in the burbs, not a farm girl at all, but my dad loved hunting and fishing. i learned a lot from him. i know how to scale fish and hunt. my boys learned hunting, fishing and trapping from my dad. they can skin a small animal...i cannot. that was many years ago, but the skills are not forgotten. one of my sons passed down the skills to his sons. you use the entire animal plus feed the wildlife. kudos!

I love watching your channel and yes you do need to can at 15 pounds of pressure if your elevation is over 1000. Also on your stew it didnt look like you were at the one inch headspace. You either need the stew to be right under that last bottom line or add liquid to that line. Its very important to have the correct headspace or they will not seal. I usually dont reprocess for another 90 minutes if they dont seal because the vegetables tend to turn out too mushy and if you do always use a new lid. I hope this helps you and have a blessed day.

I have canned deer meat many year ago it taste like stew beef where we live in North Carolina we use a 15 pound pressure at 90 minutes in pressure canner. I am older than you and have never canned much at all my mom did it and my husband know likes deer I don't like it much at all I like it a little bit but I'm glad you all like it way to go. GOD BLESS you all. The reason you don't pack it tight because it makes it on water. I would do the same thing you did re can my mother-in-law dose the same thing too. Great job.
We use a product called game tame , it is very good especially with deer roast, we have our own beef cattle and hogs also and game tame is good on them. Really enjoy your channel, first found you when I started chemo 2 years ago. And I still love to watch. Your family lives alot like we do. Merry Christmas.
I am glad you tried to keep the bloody mess out, I am an animal lover of all kinds, and deer are one of my favorite because they are so kind and trusting. I do understand the concept of we eat meat and it is from animals, but for me it is a ruff road for me. I was a vegetarian, then 20 yrs later I eat meat and it is good. But I do feel guilty.

When I was a kid my family always butchered our own meat. We did venison,beef and pork every year. I think I was around 6 when my dad started teaching me how to cut up meats and how he wanted it to be done. I really enjoy doing it. One year I was pregnant and my mom was afraid I was going to be sick from the smell of the blood, I never did. I haven't had venison in years and years but still cut a lot of my own meat. I will buy big roasts and cut them in steaks and pork chops. The only thing with growing up on fresh meat is store bought stuff just doesn't taste the same.

Have you ever made stock from the bones? From reading and watching chefs' books and videos, restaurant kitchens use "demi-glace" for sauces and gravy. It's roasted venison bones that are simmered with roasted onions, celery and carrots. Then it's covered in water and simmered for a long time. After that, I think they reduce it until it gets thick. Apparently, it freezes well and they use a few tablespoons to make a sauce or gravy. It's sold in some grocery stores, but it's very expensive. It sounds like a daunting project, but if you're home all day, you could just keep an eye on it while homeschooling or doing your regular routine. It sounds like that expensive stuff in the jars. Just an idea.
What a great video showing real life. I've processed many deer, elk, and even a bear. Boy is it a lot of work. I perked up a bit when I saw Warren with the backstraps and spotted the knife between them (at about the 15 minute mark). It was the Western and I have a full set of those.
You can thicken up a stew when canning by using cook type ClearJel. It's designed to withstand the high pressure needed in canning and it works great. I've used it in pie filling, stews, and even sauces that I've canned. I don't use things like that until I've done lots of research on it beforehand. Just passing on information that might be helpful in the future.
I really enjoyed this and the whole family pitching in. It does take a few people to process a lot of meat. I am the only daughter in law that never minded to step in and help. Poor girls don't know what they are missing.like job well done when finished. May have to try some ground venison in the future. Tried a few jars of canned venison last year. Processed nicely. Can't figure out why the jars didn't seal In wondering if it was the lids.Always a learning curve huh.Thank you so much for sharing
I found the box of 60 eggs at Walmart are cheaper than aldis eggs lately, also the crisp are great broken up on salad too, i love watching the hauls it surprises me how some things cost more there than here in NY.
We forgot to pack up cranberry sauce when we made our Thanksgiving plates to take home. So with dried cranberries I made a cranberry sauce. I added a couple handfuls of craisins, a big splash of apple juice, couple spoons of orange marmalade, sugar, and pinch of salt. Boiled it and used meat chopper to smooth the cranberries to release pectin. It was sooo good!!!

Harvesting deer is necessary for the preservation of the species...ethical hunters should never feel like you have to explain yourself. Enjoyed this video. We live in SW Missouri and my guys are avid hunters we love " deer meat" (that's what we call it)...we had fried back strap Saturday night . Delicious!! We let the wild life have the scraps...

We are processing venison and elk this week also. From Oregon. Have you ever vaccum sealed your burger or roasts, back strap etc? That is how we package ours. 4 deer and 3 elk. Good video!
The Miller High Life is my Dad's preference of beer. He does live in Wisconsin and can get it there.
Here in MN at least in the area I live...all the liquor store owners say they no longer can get it.

Great video!!! We are an avid hunting family but my husband is not a fan of ground venison so instead that meat gets taken to be made into venison cheese hot dogs and a few other things. Have you ever rendered down the fat? It makes a fantastic face/body lotion and/or soap!

Cold water is best for helping bleach be its most effective. Hot water diminishes its effectiveness, but for your cold weather and avoiding frozen fingers, a room temp should be fine. In a restaurant we wash, rinse and sanitize for 10 min (200 ppm) 1 teaspoon/ or 5ml for every 1 liter of water. And pull out to air dry.
It was alot for me to see all that meat being cut up so I did fast forward that part. Love your channel and it is great your whole family is doing it together❤. Im making chicken tortilla soup now in the crockpot

As a mom of 9 and having had split open wounds, forehead, chin and eyebrow, you can use (as aproved and used by and ER doctor) super glue. Flush with saline, (maybe follow with iodine) and clean edges as well as possible and drop several drips into wound and use a butterfly bandage to brace edges of skin bringing the injured tissue together and will heal, let scab and heal, and you can use mederma after scabbing is finished usually in about 2 weeks.

Wow, there is so much that goes into hunting and butchering and preparation! One thing I wasn’t clear on was where the silvery skin went to, is it waste and inedible or did it ground up, or put into the carcass pile? How wonderful to share the bones and such with the wildlife! I did wonder how far from your house is the carcass pile? I really enjoyed this video!
Silver skin went in the scrap heap and either went on the carcass pile or I give it to the chickens. The pile is about 1/3 mile from our house.
