Made the chicken marsala for my wife. I used Knorr stock concentrate instead of the bullion powder. She said it was better than restaurants and had much greater depth of flavor. Otherwise I seasoned everything as instructed. A very good recipe.
pro tip: for most vegies, shallots, onions, tomatoes, carrots, herbs, Asian ingredients go to a local Asian market...you will pay up to 50% less of what they charge at regular grocery stores and even the quality is much better.

I made this for dinner tonight. Truly epic for a quick meal. I used a regional fried chicken breading and a sweet marsalas wine. I plated on a bed of rice. Paired with a nice merlot. I'll definitely make this again.

I was tasked to make this dish today. We get wildmushroom flats. "Don't soak mushrooms" I call them yellow foot, most call it "winter chanterelle." Soaking mushrooms make bugs die and float up, then you cook off the water. Extra protein am I right?
You just say to use marsala wine, but isnt this just a region technically and theres loads of different flavored versions? Not sure if what wine you pick matters or not? Some of them have more spice than others for example Ive found some with vanilla, some with cherry, and more I also assume that you can use other dessert wines as substitute as well? And looking online people say you can also use chardonnay, or port, or pinot noir. So im slightly confused on what to go for

I wash mine. I just to let them soak in the water. Just a nice swish in a bowl of waster, then lay them on a paper towel.
