For the U.S. peeps out there, I used the following measurements: 1 cup almond milk 1 teaspoon apple cider vinegar 1½ cup all-purpose flour 1 cup, 1 tbsp granulated sugar 2 tablespoons cocoa powder ½ teaspoon baking powder ½ teaspoon baking sod ½ teaspoon salt 1/3 cup canola oil 2 tablespoons vegan red food coloring 2 teaspoons vanilla extract Came out PERFECT

Gel colorant worked just fine for me... I just add it to the wet ingredients and mix it reeeally well (even sometimes with mixer, low speed). This way, it releases all its colour bubbles and gives a beautiful color. Little quantity needed. Then I add the dry ingredients

making these right now! had to sub brown sugar for white, and coconut oil for canola -- also left out the food coloring but the batter was amazing....!!! do wish you would do more vegan! and convert to american measurements!

Diabetes isn't just about sugar, it's total carbs. Too much sweetener will cause an upset stomach too so be careful. It's much better for him to have a regular cupcake and adjust his insulin than guess what amounts are in a sugar free one :) diabetics need carbs just like you and I, so can enjoy normal foods.

You should try using powder fooddye :) it works very well in red velvet cupcakes, especially if you put the dye in the flour in the beginning :)
