    "We're gonna use canola because we can get it a lot hotter"-"Like, super hot?" "No" - proceeds to fry with a tiny sizzle at a temperature that even extra virgin olive oil could handle, and then uses butter anyway. Like, what?

      He didn't want the flavor that olive oil would leave. He just wanted a sear, didn't want the flavor, which is why he used canola because it's neutral in flavor.

    you can also use garden snails. if you don't want to shell our $10-$30 for imported snails.
