my favorite cheese blend for mac and cheese:
- aged extra sharp cheddar
- mild cheddar
- havarti
- jarlsberg or smoked gouda
- parmesan
I try to fresh grate everything I can too, it really makes a difference. As far as spices I usually use salt, fresh ground black pepper, dried rosemary, dried thyme, smoked paprika, minced roasted garlic, onion powder, mustard powder, and nutmeg. I typically top it with italian breadcrumbs, sometimes I mix them with panko breadcrumbs.
Also make sure you're using a pasta with ridges! It helps to hold the sauce.
