Japanese chef’s knives are some of the most expensive knives in the world. Just one knife produced at Takamura Hamono in Echizen, Japan can cost $900. Echizen has been the center of Japanese knife making for hundreds of years, and today, it’s where many artisans spend decades learning to make high-quality cutlery. At Takamura Hamono, artisans spend over 10 years learning how to properly hammer, sharpen, and polish each blade. The knives are used in many of the world’s best restaurants, including noma in Copenhagen and Le Bernardin in New York City.

Expensive? A good German Wüsthof knife will cost you €175. For the same amount of money you can buy a Japanese knife of twice the quality. If you know what you're looking for, €90-€150 will get you a very good Japanese knife. I recently bought a Takamura Chromax Santoku for €139. Not their top line, but seriously good. And I'm not a chef, so why go for overkill?
But sure, there's no shortage of expensive alternatives... €300, €600, €1200... €3000!

Everything he said, is true. I have had a Takamura knife for almost a year now and it is exceptional. It is the best knife in my kit hands down and I love it. It is the definition of being ‘screaming sharp’ and it is beautiful to look at. The powdered R2 steel almost shimmers in light. Love to see this video of the maker and how they were presented.

Japan is a country with lots of traditional craftsmanship but also a highly industrialized country. Just because a knife is from Japan does not necessarily mean it's expensive. Decent-quality industrially made Japanese knives are not mor expensive than their German or American counterparts. A santoku of gyuto (Chef knife) sell for around 75 Dollars/Euros.
He says the waiting list is years, yet suppliers are selling them?
Those suppliers are most likely selling cheap decent quality knifes. Not the high quality knives which are expensive asf
@@mitch2456 even the cheap ones are extremely nice. The grinding done on the one we gifted my mother is extremely well done. I own Yu karosaki's knives and I would say they are made just as well
they are probably the first batch that came out. an yet the options are super limited. i manage to find one in the market and i love it
