      Nathan Carrille I know. I don’t understand why everyone wants to pay 800$ for a knife make from scrap. As a knife maker I could make the exact same product as her and I wouldn’t sell it for more than 150$ maximum. If I pay 800$ for a knife I want one made from new steel and probably from Damascus.

      Actually for $159, you can get a hand forged knife made by a Japanese smith. Look at Japanese Knife Imports or Chef Knives to Go.

      @@kd5nrh Only reason the bamboo would rot is if you left it excessively moist, which you shouldn't do with kitchen knives regardless because it would rust, especially if it was a non-coated high carbon steel.

    She made a knife from a piece of scrap metal. No forge, no tempering/ Damascus patterns, nothing that you’d expect from a standard knife making process. Just a plasma cutter, a bench grinder, and a belt sander. $800??? Think of what that means relative to the Japanese knife too. That means it’s literally six times more expensive than the Japanese knife. Now I don’t know about anybody else, but if someone offered me a horse rasp knife clearly made in someone’s backyard vs. 6 super high quality Japanese made kitchen knives, it’s not even a question about what I’d choose.

      @@temlan3042 Virtually everything you said is wrong and/or irrelevant. Farrier's rasps are extremely hard - I know, I've ground a few, in fact I've got 3 sitting here - SaveEdge, BlackMaster, and a Heller. Definitely over 60-61 HRC - so they're certainly high carbon steel. Much talk on BladeForums about that. They also agree (as do I!) they don't make great knives, at least not chef knives - but not for THAT reason, OR your others for that matter. So what if it's used, and/or "has a ton of stresses" (which I kind of doubt, but doesn't matter anyhow)? She DOES heat treat them -- you, CookerSeven4 and a bunch of other folks here just assumed she doesn't because it wasn't in THIS video - but you dint KNOW, didja. (Look on her website under Video, e.g. the Budweiser video at 1:33). AGAIN - I'm not a big fan of her knives, and I'm not saying they're great - I'm just saying that most of the dissing here of her knives is pretty amateur armchair criticism from people who don't know what they're talking about.

      Also not a massive fan of that knife, but I feel I should point out that some of the top handmade Japanese knives are literally made in the creator's back yard. Some of these guys don't make very much money at all. I think the thing is that you can buy a ridiculously good factory made knife in Japan for about $100 US. It will last you your entire life if you take care of it. In terms of utility, spending more won't get you a better knife, though people always have their preferences. If you buy a handmade knife, the money is going to the craft person. It's a piece of art. They have a limit to how many they can make in a year and so have to charge more. Whether or not it's worth it to you depends on how much it speaks to you. Again, if you think of it as a 1 time only lifetime purchase, probably any good knife you can buy is worth the price.

    I used to work on knives actually! Chelsea is scamming you guys, I wouldn’t charge that much for a knife unless it was made from high quality materials. Let alone a horseshoe grinder, I’m not even sure if she tempered those knives or not. Korin is absolutely the way to go in terms of value here.

      Actually one of the advantages with using a rasp or file is that you don't have to temper it, if you know what you're doing... She obviously doesn't, she ruined the temper with the plasma cutter, but still.. 🥲😂

      I like his video where he rehabs a rusty knife and then buys one at a dollar store. My knives are nothing special. They're ultra cheap Seki Ryu knives that I got on clearance. I learned how to sharpen them and the Korin videos are pretty good and so is Jun's. My sharpness test is similar to Korin's but I have to sharpen mine more often than a really good knife.

      @Daniel S. Wow. You know enough to identify 1095 steel (which is what is commonly used in good files and rasps) but then you call it a "low carbon steel"?! You are showing a bit of ignorance - 1095 is actually a high carbon steel and considered an excellent choice for cutlery (if you are going non-stainless).
      There are other issues (in my opinion) with the $800 Chelsea Miller custom, but the choice of steel is not one of them.

      Yeah, in the grand scheme of steel, "low carbon" steels are practically useless for making knives or other tools. From my understanding, a low carbon steel won't even harden properly and even the cheapest knives are technically made from "high carbon" steel.

      @@phyllishahart6111 She's actually old news around knife/blade forums. Spectacular rubbish her knives are. Her whole marketing package back in 2015(?) or so was 'i am female blacksmith'. Therefore it justifies her pricing. The technical breakdown of everything's that's lacking at that price point have already been argued over and settled.
      There's a number of female custom knife smiths out there and some are charging similar prices for much smaller fold-able knives ie. Judy Gottage where last search could set you back by as much as 700 dollars. But none have drawn any ire whatsoever as opposed to this person selling scrap metal to fools.

      I make knifes and that’s how most hand made knifes are made or they are forged but people who make a lot of knifes quickly will cut them out with a NCN or water jet and then have the bevels ground etc anyway a lot of people use recycled materials to make knifes because it’s much cheaper and better for the planet

      if want handmade cheap but perfect good knife travel to chinese and search some knife shop then know how cheap all have here, europe same knifes cost 200 x more. someone thief lot money idiot buy knifes . cheapen have fly japan or chinese and go buy good knifes in shop. less than 200$ can buy ALL knife set and lot better guality handmade have than all europe seller ower price 500-800$ knifes. idiot waste money knife lot, 10$ knife can cut all what kitchen need cut. why waste 800$ knife ??? only idiot can.

      I love how she basically admitted she made it from the scraps of her father's backyard and tried spinning that into a good thing.
      Also, wouldn't high carbon steel like the one in a horseshoe filer be pretty terrible for a knife blade because those tend to be brittle which means a knife that is more likely to microfracture and lose it edge?

      Batali and Massimo Batura both use her knives. Even if it doesn't have the same beautiful process as a damascus I'm not going to argue with some of the best chefs in the world about the quality of the knives.

      It's a metal rasp used for filing horse shoes. Those "grooves" in her food processing blade have ancient fecal matter impacted on them. Nothing abrasive blasted or cleaned out. This hipster is selling $20 worth of materials at best for $800 and being put on by shows and famous people because of her family connections. She is not a bladesmith.       Seriously, horseshoe filing steel? What the hell is that, expensive knives from high end companies like miyabi and wusthoff have millions of dollars of r&d put into their steel to sell it for 200$. Just grabbing scrap steel lying around is not how you make an expensive knife.
      Theres no attention to the composition of the steel, it's not forged, the tempering process is just half assed. What a crappy overpriced knife.

      She's actually pretty smart IMO. She's riding on the current "repurpose" trends hence made a business out of it. From the metal to even the wood, everything was more or less garbage and remade for hipsters to froth over. I wouldn't be surprised in the next year, the handles will be made of ocean plastics to ride on that trend.
      It was never about the knife quality, since the customer that will be buying it rarely cooks, more about being trendy

    It is easier to scam people than convince people that they are scammed. I’ve been scammed before too buying knife on amazon. Strictly talking about Chelsea Miller knife, let’s talk design not just steel. This knife would grate all my ingredients to a pulp with all juices run all over the cutting board. It’s like a food processor except has no place in the kitchen. I would not pay $10 for it unless am looking to give my horse 1 last pedicure right before I stab it to death. The point of a knife is to cut food so cleanly to preserve the essence of the ingredient, avoid destroying/crushing as much tissue as possible so the flavor is preserved and not all over the cutting board. And the knife with a good steel good tempering would hold it a edge for days or weeks before needing touch up. What’s kind of steel or heat treatment do these horse rasps have? There are laser cut knife non forged knife but they still heat treat/ temper it after because cutting the steel and grind it subject it to unnecessary heat that requires the steel to be tempered so the steel is tougher/ less brittle but retain its edge longer. Like baking, It is a very precise and controlled process. Even large manufacturers have trouble, i.e some have better heat treatments than others. She did none of that process. The horse rasp probably made from tool steel which is a decent option for knife if forge/heat treat correctly, except it rust and will requires extra care comparing to stainless alloy, I can go in depth with the tried and true stainless or carbon steel but too much. How you even clean the knife probably with all the nooks and crannies it have on the sides, room for bacteria to get in and be imparted in your food and moisture the remain and rust the knife. There is much more I can say but it will become an essay.

      Yeah it's kind of a shame to spend that much on a knife made of junk steel if you're planning to use it in the kitchen... more of a decorative piece than anything. Knives made from aogami super can be had for well under $200 and will take and hold an edge far better. I'm guessing that the middle knife in this video was easily the best performer here.

      the lady is softening (annealing) her knife when she uses bench grinder and belt sanders to sharpen her knife. There is a reason the japanese use waterstones to sharpen their blade is to keep them cool while sharpening.

      @@Ken-nv2hl That is not entirely true. They use water and oil stones to achieve the best abrasion properties of the whole sharpening process. It also keeps the knives cooled as well.

      I guess it's just a hazard of the free market, because a rising tide raises all ships people like Miller have the same opportunity to find a market as all the dedicated knife makers and blade smiths out there who are slaving away in their forges or experimenting to get better and better heat treatment with modern steels. If some fools in Brooklyn want to waste $800 hopefully people with more sense will still be able to get functional knives from real artists, usually for cheaper.

      You mean Steven? He was doing a horizontal hollow grind of sorts, while Chelsea’s footage seemed to show a linear grind. Just gonna say this outright, the way she taught Steven to grip the knife is more unstable than a college student’s finances. That jittering on the blade was terrifying. The back end of the knife must be braced by the off hand in such a way that it’s like you’re holding a loose fist with your thumb over the side of your index finger (like you’re handing your boss a piece of paper with one hand). Keeping your fingers as far from the grinder as possible is a recipe for an unstable grip on the knife and therefore an unstable grind. Her grind is admittedly more stable than Steven’s, but her grip is still absolutely terrifying.

      @@adlirez her grinding technique is the stupidest thing i have ever seen, the plunge lines are non-existent so she cant do flat grinds and none of her lines are gonna be straight at all. I'm a knifemaker and i can confidently say that my first knife looks very similar to her work. id value her knives at around $60 but honestly, i wouldn't sell that crap to anyone

      Forging the metal for a knife stresses the metal, hence the tempering aspect of the forging process to allow the structure of the metal to conform causing it to have better hardness and toughness. The more you mess with the metal temperature (hence cutting out of steal instead of forging) the more likely the structure will be less uniform. So unless you are and word class blacksmith with the highest degree of extremely expensive tools it is almost always better to cut out the knife from high quality steel. But I do agree the $800 price tag is not even close to being what it should be sold for because she doesn't seem like a world class blacksmith with world class tools.

      There *is* a lot more work that goes into her knives, but this wasn't a tutorial on knife making. TBH for that kind of money I too would prefer a Murray Carter or equivalent, but Mario Batali has said he covets her work, so good for her.

    This 800$ "knife" is an insult to every knife maker. 800$ can get you a custom chef knife out of highest end steels if we talk stock removal or blades forged by a master like Murray Carter. Should have visited Murray Carter instead. ...this "knife" has poor geometry, the rasp pattern can trap food (hygiene issue!!) and I wonder if the "'blade" has even been heat treated...

      I'd agree that it's not the best knife, but it certainly seems to have its uses. And again, people seem to get so bent out of shape over this particular knifemaker so I kinda want to support her just because of that.
