Weight Watcher's: Cook Dinner with Me (Pasta with Roasted Vegetables, Shrimp and Parmesan)

    Cooking spray
    4spray(s)
    Grape tomatoes
    3cup(s)
    Uncooked zucchini
    3cup(s), chopped, coarsely chopped
    Red onion
    2cup(s), chopped, coarsely chopped
    Mushrooms
    8oz, halved (or quartered if large)
    Kosher salt
    1tsp
    Italian seasoning
    1tsp
    Black pepper
    1⁄2tsp
    Uncooked penne pasta
    6oz, about 2 cups
    Cooked frozen shrimp
    1pound(s)
    Grated Parmesan cheese
    Basil
    2Tbsp, chopped (optional)
    Instructions
    Preheat the oven to 425°F. Coat a sheet pan with cooking spray. Combine the tomatoes, zucchini, onion, and mushrooms on the pan; sprinkle with the salt, Italian seasoning, and black pepper. Roast until the vegetables are tender, 22 to 25 minutes, stirring after 12 minutes.
    Meanwhile, cook the pasta according to the package instructions. Using a slotted spoon, remove the pasta from the water and place in a large bowl. Add the frozen shrimp to the boiling water, and cook until warmed through, 1 to 2 minutes. Drain and add to the pasta with the cooked vegetables; toss to combine. Sprinkle with the cheese and basil, if desired.

    Danielle, I made this recipe tonight with chicken that needed to be cooked. I cut it up into bite-size pieces and roasted on the sheetpan after the vegetables had cooked about 10 minutes. It was delicious. I can’t wait to try it with shrimp. Thank you so much for sharing this!!!

    Danielle that looked SO delicious! I love veggies & shrimp is a huge favorite of mine. The holidays beginning with Thanksgiving & ending with New Years were a nonevent for us. We had Thanksgiving for just the three of us as our boys & their families had plans with their in-laws. So it was really quiet. Then when Christmas rolled around all 3 of us were sick. The Sat before New Years I was still sick, but Mike & Kelly were doing better. That day I was feeling so awful I told my husband I needed him to take me to Urgent Care because I felt so terrible. The dr ordered a chest X-ray & they got the first view but then when she wanted me to turn for the next view I felt like I was going to pass out. They got me right over on the X-ray table & had me lay down. The dr then said she wanted to
    call an ambulance to take me to the hospital because my O2 was so low. Once I got there they did a bunch of labs & the rest of the chest X-ray. Well it came back that I’ve got Covid. I was shocked because we’ve been so careful. I’m still in the hospital (Tues). This morning the dr said my O2 was much better today & I may go home in 24 hours or so. I’d had a better night with less coughing. So after he left, the cough came back with a vengeance, so I guess I’ll have to see how I’m doing tomorrow. My birthday is next Thursday & I really hope I’m better by then. Next year we’re going to celebrate big time. This is definitely not the way to do it. PS, a coarse chop is a little smaller than a bite size piece & a fine dice is much smaller. I hope that helps you out. I kept thinking throw a little olive oil on there too. It sure looks good.

      Lynn, I am so sorry you are in the hospital for COVID, that is not fun. I was hospitalized with covid 2 years ago, so you have my sympathy! You just take care, that cough is rough. Keep me posted on how you are doing, prayers to you!!!!

      Thanks Danielle. From what the Dr said this morning, it sounds like I may go home tomorrow. They’ve mentioned sending me home with oxygen. Earlier he said it looked good but then tonight it’s gone low again, so I guess we will see what happens. Thanks for the prayers.

    It looks really good. I would definitely eat that but I know my hubby wouldn't. He doesn't like shrimp, zucchini, or mushrooms.
