Does the mic still work with headphones plugged in?

If the headphones have a mic then that mic will take over, I’m not sure what happens if they don’t have a mic, you’ll have to do an experiment and see what happens

Man, getting the DualSense faceplates back on correctly is a major hassle.

I found it easier to get them back on then off

I couldn't get mine to sit flush with the front of the controller;
the PS button would be too indented to easily press and the analog sticks had about 5° missing when pulled all the way down.
It was all because of the two points on the top of the plate;
they wouldn't go back around the Touchpad correctly.
So, I took a set of nail clippers to them and clipped'em off by a quarter of an inch or so.
I got it back on, mostly. ☹
