Mulo'r ghonto with winter radish-Bengali vegetarian recipe

- Mulo'r ghonto is a dry mishmash of finely julienned radish that celebrates the delicious red winter radish. The recipe uses spices sparingly allowing the radish to shine. The red winter radish is available in the markets of Bengal all of winter and early spring, but it is between mid-November and mid-January that it is the most delicious. Mulo'r ghonto is not worth making with out-of-season radish in our opinion. Serve this with a plain rice and a light dal for lunch. Leftovers also go very well with rooti.

Is there a substitute vegetable that we might get in US? Love this preparation but I’m not sure we get anything like winter radish here. Also are the green tops used in other recipes?

Yes, the green tops are eaten. We call it mulo shak.
Daikons. They have them in the US grocery stores :).

দারুণ, দেখেই লোভ লেগে গেছে, ট্রাই করব! কিন্তু শেষে যে পানির ছিটেটা দিলে, ওটা কি মূলা থেকে বের হওয়া (লবণ দিয়ে মেখে রাখার কারণে) পানিটা দিলেই বেশি ভাল হতো না? 🤔
দেওয়া যায়, তবে নুনকাটা হয়ে যেতে পারে। তাই বুঝেশুনে দিতে হবে।
মূলা চিপে যে পানি বার করা হয়েছে, তা স্বভাবতই বেশ দুর্গন্ধযুক্ত। সেটা না দিলে তরকারীটা টিকবেও ভাল। মানে রেখে ২/১ বেলা খাওয়া যাবে গন্ধ করবে না। নষ্টও হবে না। সেই পানিটা না দেওয়ার ফলে তরকারীটাও স্বাদে গন্ধে খুব ফ্রেশ ও সুস্বাদু লাগবে।
একদম ঠিক বলেছেন। ওই জলটার মধ্যে সবজির গুণ টা ও থাকে। তাই ফেলা উচিৎ না

As I can remember, she used red chilli powder in the beginning. I can give you the minute. Total recipe is awesome. But I will use some slitted green chilli per my taste. It will enhance the entire taste for sure.
3:14 to 3:16 she was putting cumin powder, turmeric and red chilli powder. You can check. This (the hot/spicy ness) is obviously according to their taste.

Hey thanks.. I know it's acc to their taste. I wanna make it for my fly who don't really tale any kind of heat. So if I skip it totally and add that 1 Tbsp sugar, as shown..it would bcum too sweet.. so wanted to know how much to cut down sugar
