0:45 Well, those bananas are ripened alright. I thought they were gonna have a few black spots on them, but this is a completely new level of ripeness :) I'm sure they make great banana bread.
This method works! I had only one overripe banana and wanted to make my banana bread recipe which makes 2 loaves. The rest of my bananas were yellow with pale green tops near the stem. I placed 2 of them on a baking tray and baked them in my air fryer at 350F for 7 minutes. They came out soft and full of ripened flavor. This worked perfectly for my bread recipe. 2 thumbs up! 👍👍🍌

Thank you for this tip. It's Christmas eve and I couldn't tell anyone to stay out of the fruit which is so much more healthier than candy type sweets. Last night I had to buy green bananas for my banana bread. Again thank you Justin.

You can do the same exact thing in a microwave. Just use a fork and poke holes every 1 inch apart on both sides of the banana and microwave the banana for around 3 minutes on high.

I did this once a few weeks ago in my Ninja slow cooker as it has an oven mode and it worked like a charm.....
Now as a side note I think that Justin should try getting a part in the BBC show Dr.Who as I think that he would be great in the role of the Doctor...
This is so easy. I cut ripened bananas into discs and freeze them. Then mash down with an electric mixer; add frozen fruit; mix a bit more. That makes an excellent ice cream.

Exactly! He's teaching you how to "cook" a banana, not "ripen" it. There's a bunch of videos that let you know how to actually RIPEN bananas quickly.
Personally, I got here by searching how to ripped bananas because I'm going to make banana bread & don't want to wait days for them to over-ripen so this is perfect. For the purpose of banana bread, as he said, this is perfect. If you want to ripen them to eat normally though, put them in a paper bag, adding an apple will hurry the process.

So Mad Genius, can you explain why my banana bread always comes out a dark brown color while so many others achieve a more pleasant yellow color? I've tried numerous different changes to get my banana bread yellow but the only remaining variable is my electric stove. I've tried convection too with no change. Could a gas oven make the difference?

This works if the bananas are not overly green. If they are very green, put them in a paper bag and cover loosely and put them in a warm area. Wait a day or two for them to ripen. Ethylene will build up and circulate within the bag, speeding up the ripening process. Tip: Place a ripe fruit such as an apple or tomato in the bag as well. These other fruits also emit ethylene and will enhance the bananas ripening.

Yeah, I did this for 2 days and it didn't ripen my bananas. Even with the apples in them.
Now that right there it's something that does not work at all with green bananas. You'll be waiting a hell of a lot longer than that ok take my word on that. And if you ever tried it you would know that already.

How to leave my bananas in for 20 mins 350. They wasn't even green. They won't ripen die nothing. Is it something wrong with my bananas
I have doubts it did much but soften it. The cell walls got ruptured with stream and a small amount of starch would have converted to sugar but it wouldn't have much real flavor. Just add sugar and imitation banana flavor because fast is not always sufficient.

If this is what happens when you cook them then can't you just use unripe bananas and as the banana bread cooks it will rippen?

So just fyi everyone, make sure you do your bananas on a dark non-stick cookie sheet. I didn't, and am now 23 minutes deep with bananas that are JUST now beginning to turn. 🙄

Nutritionally speaking, it'd be much better to let it ripen naturally.
+Clarissa Harings wrong, bananas can ripen on the tree and when picked early yes, but they still do convert their storage into sugar, and their nutritional value will increase even when ripening off of a tree.
How is this any different than mashing up the banana when it's not very ripe, adding it to the mix, and baking it at 350. Wouldn't they ripen as they were being cooked?
Nope! Ripe bananas have a higher sugar content, since as a banana ripens the starch converts to simple sugars. So they behave very differently in recipes.
@@foodandwine I'm not convinced but the proof is in the pudding. I just put my version of banana bread in the oven with bananas that were not ripened. I'll let you know.

If you are using the bananas for banana bread you will be cooking them anyway. Cooking them before mixing up the bread batter doesn't do anything that would not have been done anyway.

This doesn't ripen a banana, it makes them soft. They will still taste like unripened bananas. Throw them in a paper sack with an apple, seal, and they'll be good to go in 24-36 hours. Ripening involves sugars somehow, changing the TASTE and texture.
