    I usually go over board when I start something new, as I did with my first batch of sumac seasoning and sumac tea. It was a learning process but it turned out to be a good one. I have a supply of lemony pepper seasoning and tea making material at the same time. Even my wife, who has reservations about my DIY projects around here thinks there may be something to this sumac business. She agrees that having a MacGyver around the house isn’t a bad thing.
    I cut a bunch “bobs” off the sumac trees along a walking trail we use and dried the entire stems in a dehydrator for several hours. Next the berries were stripped off the woody parts into a bowl and then put in a coffee grinder I keep for herbs and nuts. Using a typical mesh sieve first and then a fine mesh sieve next ,the ground up berries were sifted into a bowl to remove the “too large” bits of seed hulls from what I will use for seasoning fish and chicken cutlets.
    The “too large” seed parts remaining in the fine mesh sieve are then transferred to an empty tea tin for future beverage making. After, of course, I finish the current cup of tea I made before closing the tin.

    The lemony flavour returns to the sumac berries after a rain is followed by sunny warm weather. The test to check the flavour recovery is to simply grasp the berry clump then lick your finger tip. If the lemony Pepper flavour is present - go for the tea or lemonade.

    Fun and educational vid. Don't ever worry about a rooster in the background. Lends cred. We have so much of these growing on our little farm and like Opium Lettuce (which grows close to 20' tall here in NE TN) we are just learning about it so thank you.

    You want to have 3 or more days sun no rain u r looking for the ones that r sticky and great idea to collect them away from roads or traffic to limit contamination 👍

      Also don’t mash leave whole while soaking makes it more sour when you mash them

    I don't understand how you could "wash the flavour off". They get rained on many times a year.

    This grows invasively in Pennsylvania too. It's everywhere here.

      Bile, what I want to know is the tea green or rough? Sometimes when they show the tea it is pink and sometimes it is green. Is the color added to the tea or is it naturally like that? Thank you.

      It's varies depending on how much you use . Any I have brewed has been a nice light natural rose color to dark rose color when brewed.

      Prof.Kent the flavor is the red powder on the berries so don't rinse too much
