Interesting I did not know you could make a beverage from sumac. I use the ripe berries in my bee smoker to make the bee mites drop off and fall thru the screened bottom.
These things grow like weeds on my property, always wondered what they were and if there's any usefulness for them. I cut down a bunch every year, this year I'll wait until I can try the fruit.😁
Does smooth leaf sumac ever have drupes hanging in a downward fashion during the spring season when the fruit is still a creamy white cluster of flowers?

They were all cream colored flowers, not red fruit, but I heard that the fruit starts off as white, cream colored conical configurations of flowers. The book I have also warns that smooth sumac is erect and poison sumac is drooping., That's why I wanted more information and started looking online. However, the serrated leaves point just confirmed that it's not poison sumac. "Foraging The Rockies" by Falcon Guides is the book I'm reading.

How do you clean the bugs off before you prepare them?
I don't. I try to pick fruit without bugs, but either way it all goes through a strainer, so no bugs end up in the final product.
Why bitter out is bad thing soak in hot water?
Excuse me, if drink sumac, better with warm / hot water or cold water

Yes, sometimes the spent remains of the previous years fruit will still be hanging on.

@@MatthewBendyna yeah poison sumac is an eastern swamp species, it doesn't grow in the Rockies.
