Been making this for 3 months since I started keto. Im a picker and this is so perfect for me. I can’t sit and eat a bowl of it but I absolutely LOVE picking it now and then when I feel like a bite. Its very satisfying and keeps me from overeating. Since no one else likes it, it lasts me almost a week. The tartness from the vinegar, the meat and cheese, the saltiness of the olives (both black and green)... total perfection for all types of cravings. I leave out the bell peppers cuz I just don’t enjoy them raw. Btw: Im down 30 lbs and so is hubby.
This looks absolutely amazing and I am 💯 going to make this today!! The only thing I want to suggest to new cooks is that a simple vinaigrette of EVOO/vinegar doesn’t stay together; if you want it to emulsify and stay homogenous, you need to add a third ingredient to allow for the emulsion. Mustard is most common, Dijon, regular, spicy.. or any kind of LC condiment , maybe the Thai chili garlic sauce, then once combined , the oil and vinegar cannot separate any longer 😇
Made this for the first time yesterday , scooped out one cup and was like hmmm i don’t know if will be full after this Literally after eating it so full for the rest of the night! I loved this it’s so easy thank you

Only issue is it separates after day 3. Added mustard per commenters recommendation but it still did it. Wondering if I need to blend dressing first so it won't separate.
I made this tonight and added avocado, chunks of cucumber and a handful of cherry tomatoes cut in half and it was tasty and very filling. I’ll use this recipe again with the add-ins. I can’t eat a lot of heavy meat/ cheese / olives but with the veggies I’m in heaven.
Oh I forgot to tell you that I made this salad for my family on the 4th of July and they LOVED IT!!! No one else in my family is low carb and they liked your dish so much. They packed up mostly all of it to take home 😅 I was left with a small amount but so delicious and I definitely saw the effects of this salad the days after - such a flat tummy even after a major holiday!!! Great recipe, please do more recipe videos 🥳

Love this and can’t wait to make it. Sorry for lengthy post in advance, but I thought, I love bell peppers raw but they don’t love me so I thought chopped cauliflower in their place. That made me think of olive salad since some brands have cauliflower in them. I’m originally from New Orleans and I have been doing a muffuletta lettuce wrap using olive salad. For those that haven’t had the pleasure to eat a muffuletta it is an amazing sandwich served on a dinner plate size Italian seeded bread with ham, Genoa salami, mortadella, Swiss and provolone cheese topped with olive salad. The olive salad basically consists of marinated broken olives, pickled veggies, including cauliflower, carrots, celery, red pepper and capers in olive oil and Italian seasonings and its a flavor bomb. I am in the Atlanta area and I can buy Boscoli Family Italian olive salad in the pickle section at Kroger, Walmart and I believe it may be available a Publix. We also put it on top of a plain salad, omelettes and zoodles. Thanks again for this recipe and how it made me think of home, it’s a winner! Tomorrow I’m gettin my gloves and heading to Publix deli😋
I just went the store and got meat and cheese . I did get a little spend and picked up imported provolone and fontina cheese . I also bought sticks of Milano salami . I am not a fan of vinegar so I usually make my own dressing of extra virgin olive oil , lemon juice , salt pepper. Italian seasoning and a bit of Dijon mustard blend it together and toss as you did and serve over arugula it cost me $26 bucks to make it but I have plenty of servings at least 6. Also serve over zucchini noodles . Perfect food anytime
Finally made it and it does taste good and I added zesty Italian packs so I can make my dressing which was made with olive oil and the red vinegar to make it..really good
Work in a hostipal as a Phlebotomist and im a huge health nut.. I fell in love with salad the first time i ate it was at work.. And i make it at home very very often absolutely Great.. Lost 48 pounds 152.0
I just made it for my lunch for the week. It's now in the refrigerator chilling. I added some roast beef and Turkey just so it won't spoil. Food is too expensive to allow it to go bad. I feel it will taste good. It smelled and look good with all the colors.
Delicious! I add cucumbers, green spanish olives or banana pepper rings, a little thinly sliced red onions and use Primal Kitchen’s Caesar dressing with a few dashes of dried oregano. Even marinated artichokes or mushrooms would be great in this!

Add some roasted artichoke hearts , you can use cooked chicken a small can tuna ,chopped roast beef or lamb or baked salmon portion flaked,or chopped roast turkey ,the switch ups are endless and for vegans use lentils or butter beans

I think it turned out great thou. I know several women might not have needed one women on KETO but that all has to do with genes. I am trying this an just trying to get over some of the symptoms of the KETO diet. Like the feeling tired and yes the keto flu symptoms as Well. I love this....so good. The only thing I changed was the peppers to peperoncini peppers because I do not like red or green peppers. It came out to 5 net carbs but yours says 3....I put this directly into carb manager. Any idea why?

Hi Gen Another suggestion is to use any packaged dressing that lets the salad shine (so no French, ranch, cesser) but something like Italian, poppyseed, vinaigrette, etc. A homemade dressing with smashed avocado thinned out with something and a few spices would be delicious too! Although if you didn’t use lime/ lemon the avo would turn brown.

Agree. Make sure you blend the oil, vinegar and mustard with a stick blender or food processor. Add some Italian seasonings.
Finally made it and love it! Today I warmed it and added bacon lettuce and tomato on a low carb tortilla. Tasted like my favorite Italian sub!!!

If you dont like the salami can you use something else a different meat
