- Ever wanted to make your own bacon but it just seemed too scary? well today I show you how to make your own without the risk of killing your entire family. In fact, this is so easy you will never buy bacon again! Today we do 3 whole pork bellies. 2 using curing salt and 1 without. Which will one is better???

Jess Nicholson thanks!! Yeah, those spices really do add something to the end result. That was an adaptation from someone else’s recipe. You can add what ever you like really. It’s a really good idea to take notes with with quantities etc, each time you make a bacon. I’m still kicking my self for not doing that at the start. One of the first one’s I made was by far the best. But, I didn’t note anything down and have never been able to replicate it.

What size bag u use? I just have the ones on a rolls that I cut to size.
Hey mate, that’s what I use too and then just cut them to size. I believe they are 28cm wide.

Hey mate. Does the length of the curing process change depending on the size/thickness of the belly or is 8 days a good rule of thumb regardless?
8 days is a good rule of thumb mate. I always try and get a nice full belly but I have done half and smaller pieces in the past for the same time period and just amended the curing mix to suite.
I did a lot of research on this before hand and it’s crazy the amount of information out there. It’s almost like you have to be a mad scientist to even attempt to make your own bacon.
It’s always good to do your own research first just for piece mind.
When you start talking ham etc it gets a bit more complicated regarding thickness.
