I am a Hyderabadi....and I find cooking chicken biryani is easiest...my daadi would say 3 most important things in making chicken biryani is best zaafraan best ground fresh cardamom and freshest Hara masala ... meaning Hari mirch mint coriander 😊...but she insisted on basmati rice.... enjoyed watching you as als❤an avid fan
With due respect to Chef Ranveer Brar and all his lovely knowledge about food, would like to just mention that Hyderabadi Biryani doesn't have coriander powder and mace powder. The green chilli is used in the form of a paste and not slits. P.S. All of you can make your biryani with your own style and taste based on the region and culture you come from. No offense to Chef Ranveer or anyone, but I'm so deeply connected to Hyderabadi cusine, I thought I should mention this point. Love you Ranveer Paji ❤️

Hello Little addition Hyderabadi biryani includes garam masala(Elaichi, cloves, cinnamon and caraway seeds,ground to powder) and also it doesn’t include coriander powder. 😊✌🏻
Hi Ranveer, I tried out this recipe with 4 kg chicken and 3.5 kg basmati rice, in the end I topped it with a little ghee. It was just awesome, 14 guys ate it all up for one meal. Hey Ranveer, I made my 1st ever Biryani following your recipe but it didn't come up quite good in taste and texture. The colour and taste was not like yours so I have few doubts and it would be really helpful if u can take out some time to answer those. 1. The color of marination was not as red as yours and is it because I used wrong chilli powder. As u have used deggi lal mirch and after some research I found out that kashmiri mirch pow is brighter and mild hot than deggi mirch pow. So please clarify. 2. For saffron water, I used 20 strands of Everest saffron(0.5 g box). Does the saffron water need to be the same deep red color like yours for giving the right color to rice. 3. My chicken base got burnt a little bit so do I need to first cook the chicken marination alone and then go for the layering and how much and in which flame intensity should I need to cook it. P.S - Thanks for the recipe and you really always cook with a lovely smile.

in Bangladesh traditional kachhi and biriyanis are made with shortgrain rice called chinigura and kalijira. basmati can never beat the aroma and the flavour of these rice.

The most valuable tip you have shared in the recipe is not to use chicken breast, I completely agree that chicken breast get chewy after cooking, not just in biryani but in all chicken curry dishes. You are a highly skilled chef dear Ranveer, Can you give a pro tip to avoid chicken breast getting chewy while making Korma and any other chicken curry ? I would really appreciate if you respond to this and I assume this issue is faced with most of the people when cooking chicken.

The way you teach and interact gives each and everyone the power to cook. Also, as a food enthusiast I love the food anthropology bits as much and gives me more reason to cook the dishes. But, over time there has been an observation which I think is easily solvable. In your entire plethora of videos there is not a single recipe from North Eastern India. The food of North East is very underrepresented and the stories have not been highlighted by any cook show for that matter. My personal experience...cut the breast pieces into small and marinate it with some vinegar before addinf to the curry
