Holy_Mess, good for you! The tops of most root veg are edible. We have gotten "lazy", IMO, and throw away a lot of parts that people used to eat. Beet root greens, radish greens, the white rind of watermelon, are all very healthy for us. Before I throw something away, I do a quick google search to see if it is edible and get ideas on how to cook it. Keep experimenting and learning. Blesings.
Instant hit with family with minor modifications: 1/2 rutabaga root + cup of diced kabocha squash replaced beans ond portion of pasta, for the remainder of pasta we used rice-quinoa pasta with the same magnificent result. very pleased, thank you Jamie
Having binge watched so many of Jamie’s videos (who doesn’t binge watch these days?), I am reminded as to why I loved him initially in “The Naked Chef”. His enthusiasm for his craft is infectious. Plus he does not put on airs as a “chef”. He makes the effort to show how to reduce waste in the kitchen and how to use what is on hand to produce wholesome food. Kudos, Jamie!

Josephine Paraiso Viernes home made minestrone is a firm favourite in this house. My husband is a vegetarian so it’s a really lovely way to use any veggies passing their best. My only essentials are onions , other than that, pretty much anything goes. I like a handful of small pasta, I buy the soup pasta normally, but as we know life is not normal right now. I occasionally throw a couple of handfuls of lentils in for the last hour, instead of pasta.. My adult daughter loves making her own version too, she says she can feed a hungry family of four for under £2.00

Turned out amazing, I pretty much added all the veggies I had, zucchini and spinach instead of kale(wish I had kale too but it’s ok) and also added some red potatoes, parsley, green beans, bell pepper. Turned out so beautiful and delicious and healthy which is so important during staying home so much. 😊 thank you again for the recipe and the motivation. God bless!
That looks delish,I must try this version,Ive never made it with bacon,I usually brown shortcut beef ribs then add everything else in order of the time they need to cook.and I peel some fresh tomatoes after dunking in hot water & break them up into it.or I just make a vegetarian version minus the meat& add a good stock cube.
I'm an avid follower of Jamie Oliver and Gennaro Contaldo plus the great Antonio Carluccio too. I regularly try these recipes. So simple and delicious. It not only passes the time in these difficult times for everyone, but it certainly produces wonderful food.

Great series this, getting loads of tips as well as great meals. Made the risotto ( with pudding rice) didn't doubt that it would work, but clever just the same. Pizza with self raising flour got 4 filling portions out of that, great topping, even though we only had bacon. Thankyou Jamie

you dont even need to use stock. just plain water is fine. The vegetables you add in are already a base of a good veg stock and the umami from the tomatoes brings out the richness in the soup.

U can skip the bacon's
Just add a bit extra olive oli.
Don't use the bacon and use more olive oil, and if you want some smokiness use smoked paprika or chipotle chili powder.

Water is of course always fine, but for depth of flavor stock is always preferred (and used by chefs and top restaurants).
