After sharing "What We Eat in a Week" videos with healthy meal ideas for breakfast and dinner, I had sooo many requests for healthy lunch ideas.
Truth is, since we are all together as a family for lunch I usually just make more of the same. Its usually something along the lines of meat and veggies, eggs, salmon, avocados and sauerkraut.
Last week was a craaazy week, with the magazine crew here for four out of the five days. I had to send my husband and kids out a lot, and had to think of something to send them on the go.
It made me think of the sourdough tortillas I used to make all the time. After making a couple batches, I wondered why I ever forgot about them. They are so easy and so convenient!
We had cilantro chicken wraps with purple cabbage and honey mustard for lunch today, and I just got some more dough going tonight.
I already have a bunch of leftover chicken in the fridge, so tomorrow's lunch is going to be as simple as rolling out a couple tortillas and packing them with meat, veggies and herbs.
Sourdough tortillas may be vying for the top spot in my favorite sourdough creations. Right next to English muffins...or pancakes, maybe pizza crusts. Ok, I really love all things sourdough, but these tortillas are going to be a staple in lunches this summer. Quick. Easy. Not hot.
Who wants hot meals on a 90 degree summer day?!
These can be made with any wheat flour, white, whole grain, or even white whole grain. I use hard white wheat berries that I grind fresh in my Nutrimill grain mill.
Long fermentation is the traditional way to prepare grains. The bacteria present in the sourdough starter pre-digest the grains and make them easier for the body to process.
Many people who are very sensitive to gluten have told me that they can actually tolerate it when it is fermented for 24 hours or more!
Isn't that amazing?!
It makes sense why so many people can't have gluten today. Grains are no longer prepared traditionally. Also, many species of wheat have been hybridized and modified, so that they are no longer in a form that are body is prepared to handle.
If you are super sensitive to wheat, I suggest letting your sourdough goodies ferment for at least 24 hours before cooking/baking Also, its better to use ancient einkorn wheat, which hasn't been hybridized.
Sourdough Tortillas Ingredients
3 cups flour (I use freshly ground hard white wheat)
1 cup sourdough starter
3/4 cup water
1/4 cup extra virgin olive oil
1.5 teaspoons salt
Sourdough Tortillas Process
1. Add the sourdough starter, water, oil salt and flour to a mixer with a dough hook.
2. Knead for 2-3 minutes in a mixer, or 5 minutes by hand. The ingredients should be fully incorporated, and the dough slightly elastic.
3. Place the dough in a greased bowl, cover with a tea towel and allow to sit at room temperature for 12-24 hours. (If you are gluten intolerant, 24 hours is better.)
4. The next day, divide the dough into 12 equal parts...

Making the most of quarantining and am so grateful for the sourdough starter you inspired me to make last year! Thank you 😊
I would love to see a video about grinding your own flour!
The tortillas are made a little different than I how learned to make them. And we don't use oil on the skillet (comal) to cook them..
These are soooo goood. Made them two days ago in preparation for a weekend backpacking trip and almost devoured all of them already
I was just talking about finding a recipe for sourdough tortillas with my husband the other day. So glad you posted this! Can't wait to try!!
Haha perfect!
Definitely going to try these! We LOVE your sourdough english muffins and they have become one of our favorites! :)
Didn't know they made a stand alone kneader? Wow. Also didn't realize you milled(?) your own flour. Wow. What a great way to streamline! Continued success on the growth of your channel/blog! Proud of the clan on Boone Street 👍👍👍
Aww thanks!

These are amazing! My family loved them. We had chicken fajitas and they were really really great!!!
Would you ever think of going through some of your GAPS experience? Did your whole family do it, or just you? What did it look like each day you went through it? Thanks for this I've been making alot of sourdough pancakes with my starter!! My boys say there the best pancakes I've made, I use to make my own pancake mix and that was good but these are better!! Can't wait to try these tortillas, I had a flour one I make.... thanks for sharing!! 💗
Yum! Please share your honey mustard recipe, thank you.
My sister actually has a recipe for it: ruclips.net/video/4CyxkaRZqn0/видео.html
I seem to remember you mentioning you were on the GAPS diet. How was your transition off of it? I’ve been on it for over 2 months and hoping to arrive to a diet similar to yours.
I'd be so interested in this~ I have never heard her say that so that would be amazing to hear.
I’m just getting into sourdough and I’m really enjoying your videos! Thank you for sharing so much!
Hello Lisa, I have been sourdoughing since 2020 ( all my starters were born on 11/20/20) I saw your short video on sourdough tortillas, sourdough tortillas I have been contemplating until now so I will be making them but my question is, have you frozen these and if so, how is the integrity when defrosted? Thank you so much and Happy New Year to you and your family!
As long as you separate the tortillas with parchment before freezing, you can then lay them out to unthaw on a tray and they are just fine.
Will definitely be trying these out! Love finding new sourdough recipes to use up all that starter!
Hi thanks for your recipe! I made it and it taste lovely. Just want to check how can it last if i keep it in e fridge as i made quite alot
You should make a video about your favorite/most useful kitchen appliances.
I love making our tortillas! They always taste the best right off the stovetop!
Yes!!
Hi Lisa! Thank you for the recipe. Will try it out this week. The kids will have a blast helping and playing with the dough.
Is that subscriber library still available?
Love these types of videos ...any chance you can show us a healthy gluten free pizza and bread recipe
Would love to have that mixer but just can't justify almost 500.00😮
Love your channel. So lite fresh and full of great info that I have been using☺. keep up the great work.
In Mexico we use lard for tortillas
Please make a video on grinding your own flour. 🙏
I love how you're videos are so simple and easy to follow and it's to the point! Thanks for all you share :)
Thanks Joan!
Great video. You can also easily and quickly grind grains in a BlendTec blender. It is a great blender, better than the V-mix imho (since I've owned both).... just fyi. : )
Thank you for another great video! Wanted to ask what do you guys do for retirement? Since you had mentioned your husband also left his job how do you guys do it? And congratulations on that.
Thanks Joy! We always put away some in investments every year.
Can you please post some healthy cakes/ dessert recipes
I made this recipe but after 18-20 hours the dough was very sticky and hard to shape. The only way I could shape it was adding more flour and even then it was sticky.
What can I do to make it more workable without needing to add extra flour?
Loved the flavor with the few I was able to shape… so I would really love to find a way to make them 😢
If I had to guess it sounds like the dough wasn't kneaded long enough to get good gluten development. I would knead it for longer until it comes together and is no longer sticky or shaggy....you can wet your hands as that helps the dough to not stick to you....
Have you ever thought about growing your own veg kids love it
Yum, going to try these soon. Just put sourdough back in refrigerator but guess will take it out two days ahead. So much sourdough and so little time. hehehe....
Unfortunately, I don't have a cast iron skillet. Can I make these in a non stick frying pan as well?
hi I tried to download the 100 healthy recipe guide and shopping list but it doesnt work.
What is the secret to getting the round shape of the tortilla? The flavor was great but mine turned out more like odd shaped pita bread
So fun! Now I can use my starter in other ways! I was wondering if you could share a sourdough sandwhich bread. I have a two year old and he really enjoys sandwhiches with nut butters and homemade jam. Do you make bread with your starter?
I need to do this! I currently paleo, for all the reasons u discribed. Ugh. I want bread that doesnt fog my head.
Do you know how well these freeze? Like can we make a bunch ahead, freeze them. And use them when needed??
Yes, just freeze them with parchment paper between each tortilla so they don't stick....or freeze them on a cookie sheet first and then out them in a ziplock....
@@FarmhouseonBoonetoo easy! Also thanks for being so responsive on your channel!!!
I’ve been loving so many of your recipes. I’ve been starting a sourdough starter this last week after seeing your video. I was wondering do you have any jam recipes? I’ve been wanting to get into homemade jam. But I don’t know where to start.
Well done, I have to make this. Thank you for sharing love the music so relaxing. I feel like I’m not in the city, lol.
As so as your video is or it’s like I get a reality check, an I’m back in the city.
Your house is amazing love the porch .
My dough was so soft and not formable. I let it sit for 24+ hours
So excited to try your sourdough tortillas as I been meaning to see if you had it here. Can't wait to try!
Wasnt a fan on how my sourdough tortillas came out. Can I use this dough for a bread or something else?
If I have a dough that doesn't turn out how I want it, I will fry it for fry bread or turn it into croutons or bread crumbs
This looks excellent! Thank you for demonstrating your method and explaining the benefits. :)
Does anyone know if the sourdough starter has to be fed starter. Or just straight from the fridge
You can use active sourdough starter or discard.www.farmhouseonboone.com/how-to-make-sourdough-tortillas
What can I do to save my starter if it doesn't pass the float test but does gave lots of bubbles and doubles?
If you think it needs a boost, feed it some rye flour...however, if it doubles and has lots of bubbles it is probably just fine to bake with
My tortillas made with all purpose are coming out kind of thick. Amy recommendations for making thinner tortillas?
Also, I’m using a tortilla press which is making them flat and round, but as soon as I take them off the start pulling/bulking up a bit?
I would just use less dough for each one and that should give you a thinner tortilla after it is pressed...
Are all the e-books you mention included in your new book?
HI, once you prep the dough, do you let it ferment on the counter or in the refrigerator?
Place the dough in a greased bowl, cover with a tea towel, and allow to sit at room temperature for 12-24 hours. (If you are gluten intolerant, 24 hours is better.)
The next day, divide the dough into 12 equal parts.
I have a Bosch and Nitramill
I love homemade tortillas.
Hi! I made these last night! Delicious. I am wondering how to prevent the rising dough from getting a crunchy dried out top while it sits over night? Yesterday the top was super dry. What can I do?
You gotta cover the bowl with a wet towel!
I can’t wait to try these for our Mexican dinner night this week! :)
That looks delicious! My baby dough died :(
Are you using all purpose eincorn flour, please reply.
Can you use discard? Or should it be fed starter?
it should be fed
Hello! I tried to make these today but for some reason, they turned out a bit thick and tasted like raw flour/gummy. Do you have any idea where I could’ve gone wrong? I’d love to make these again once I figure out my mistake!
Did you get a response? I had the same problem. 😕 As I stretched/rolled out the tortillas they would shrink back. My husband thought they were good but I would love to get mine thinner as shown in the video.
Would love a video on how you grind your own grains and all the things you need for it!
Can you substitute with ground oat flour?!
Do you use a fed or unfed (like discard) starter?
Can I make these ahead of time and keep in fridge?
Wow! Great recipe! Love sourdough🤩
I always get so hungry when I watch your cooking videos. 😉 What was that sauce/dressing you drizzled at the end?
Honey mustard. I just mix honey and mustard. 😋
Tried sourdough tortillas. Thanks for the great idea
Love your channel 😊
Thanks Hayley!
Can I use regular plan all purpose flour and let the water set out over night then use it to make sourdough starter?
yes
Look so delicious I will try it for sure‼️
Can I sub corn meal for some or all of the flour???
I haven't tried that but I don't see why you couldn't...
What would be the best way to store these?
I make them and then we eat them but if you wanted to store them I would make a stack with each tortilla being separated by a sheet of parchment or wax paper, you could refrigerate for a day or two or freeze for longer...
Look yummy! Will have to give these a try!! Holly
What's the quanitys in grams?
1. I subscribed to your email list and I have never received an email with any password. 2. I’m kind of bummed because I am eating the keto diet and I can’t eat breads and lots of carbs and things like that. At least not until I get to me Desired weight that I want to maintain. So I don’t know if I should make these and keep my starter or what to do with it!?
Kelly Moore
I was keto for quite some time and know the pain 😎
It‘s actually an interesting question....could one make a keto friendly sourdough? Regular flour is out, obviously...maybe just do the experiment and start feeding your sourdough a mixture of almond and coconut flour and see what it does? Maybe your sourdough can ‚go keto‘, who knows? Although this particular recipe would probably turn out more like a thin pancake than a tortilla without gluten. It likely wouldn’t be suitable for wrapping things.
Otherwise you’ll have to stick to regular keto recipes...there is just no way to incorporate normal bread in a keto diet.
Rara Avis thanks for your suggestion Rara! I’ll experiment!
Shoot me an email. lisa@farmhouseonboone.com I will try to figure out why it didn't send! :)
You always look gorgeous 😊
Can you freeze these tortillas
yes, just separate them with parchment so they don't stick together
Will this recipe work with all purpose flour?
www.farmhouseonboone.com/how-to-make-sourdough-tortillas
@@FarmhouseonBoone thanks so much, you’re just the best!
I love your videos! You just make me smile!
Do they sell wheat berries at tractor supply, or do you reuse bucket?
I just reuse the bucket.
Thank you, Lisa and thumbs up!
Brows on fleek 👁. Love it!!
Do you have to use oil?
Can you freeze these?
yes, see my comment above
Thank you so much 😊
You're welcome 😊
Nice job Lisa!!! 👍🏻😁
Can I use discard for this recipe?
yes!
yum... trying that too...
Looks delicious 😋
Looks delicious!!!
Would love your honey mustard recipe!!!
In a previous posted response she said just mustard and honey. Probably to taste but don't know her exact ratio.
My sister actually has a recipe for it: ruclips.net/video/4CyxkaRZqn0/видео.html
Looks so good.
Can these be frozen?
Yes! Sure can :)
Can you use spelt instead
Yes I do believe you can, since it has gluten. :)
That dough looks rougher than my life
