    After sharing "What We Eat in a Week" videos with healthy meal ideas for breakfast and dinner, I had sooo many requests for healthy lunch ideas.
    Truth is, since we are all together as a family for lunch I usually just make more of the same. Its usually something along the lines of meat and veggies, eggs, salmon, avocados and sauerkraut.
    Last week was a craaazy week, with the magazine crew here for four out of the five days. I had to send my husband and kids out a lot, and had to think of something to send them on the go.
    It made me think of the sourdough tortillas I used to make all the time. After making a couple batches, I wondered why I ever forgot about them. They are so easy and so convenient!
    We had cilantro chicken wraps with purple cabbage and honey mustard for lunch today, and I just got some more dough going tonight.
    I already have a bunch of leftover chicken in the fridge, so tomorrow's lunch is going to be as simple as rolling out a couple tortillas and packing them with meat, veggies and herbs.
    Sourdough tortillas may be vying for the top spot in my favorite sourdough creations. Right next to English muffins...or pancakes, maybe pizza crusts. Ok, I really love all things sourdough, but these tortillas are going to be a staple in lunches this summer. Quick. Easy. Not hot.
    Who wants hot meals on a 90 degree summer day?!
    These can be made with any wheat flour, white, whole grain, or even white whole grain. I use hard white wheat berries that I grind fresh in my Nutrimill grain mill.
    Long fermentation is the traditional way to prepare grains. The bacteria present in the sourdough starter pre-digest the grains and make them easier for the body to process.
    Many people who are very sensitive to gluten have told me that they can actually tolerate it when it is fermented for 24 hours or more!
    Isn't that amazing?!
    It makes sense why so many people can't have gluten today. Grains are no longer prepared traditionally. Also, many species of wheat have been hybridized and modified, so that they are no longer in a form that are body is prepared to handle.
    If you are super sensitive to wheat, I suggest letting your sourdough goodies ferment for at least 24 hours before cooking/baking Also, its better to use ancient einkorn wheat, which hasn't been hybridized.
    Sourdough Tortillas Ingredients
    3 cups flour (I use freshly ground hard white wheat)
    1 cup sourdough starter
    3/4 cup water
    1/4 cup extra virgin olive oil
    1.5 teaspoons salt
    Sourdough Tortillas Process
    1. Add the sourdough starter, water, oil salt and flour to a mixer with a dough hook.
    2. Knead for 2-3 minutes in a mixer, or 5 minutes by hand. The ingredients should be fully incorporated, and the dough slightly elastic.
    3. Place the dough in a greased bowl, cover with a tea towel and allow to sit at room temperature for 12-24 hours. (If you are gluten intolerant, 24 hours is better.)
    4. The next day, divide the dough into 12 equal parts...

    The tortillas are made a little different than I how learned to make them. And we don't use oil on the skillet (comal) to cook them..

    Would you ever think of going through some of your GAPS experience? Did your whole family do it, or just you? What did it look like each day you went through it? Thanks for this I've been making alot of sourdough pancakes with my starter!! My boys say there the best pancakes I've made, I use to make my own pancake mix and that was good but these are better!! Can't wait to try these tortillas, I had a flour one I make.... thanks for sharing!! 💗

    I seem to remember you mentioning you were on the GAPS diet. How was your transition off of it? I’ve been on it for over 2 months and hoping to arrive to a diet similar to yours.

    Hello Lisa, I have been sourdoughing since 2020 ( all my starters were born on 11/20/20) I saw your short video on sourdough tortillas, sourdough tortillas I have been contemplating until now so I will be making them but my question is, have you frozen these and if so, how is the integrity when defrosted?       As long as you separate the tortillas with parchment before freezing, you can then lay them out to unthaw on a tray and they are just fine.

    Great video. You can also easily and quickly grind grains in a BlendTec blender. It is a great blender, better than the V-mix imho (since I've owned both).... just fyi. : )

    I made this recipe but after 18-20 hours the dough was very sticky and hard to shape. The only way I could shape it was adding more flour and even then it was sticky.
    What can I do to make it more workable without needing to add extra flour?
    Loved the flavor with the few I was able to shape… so I would really love to find a way to make them 😢

      If I had to guess it sounds like the dough wasn't kneaded long enough to get good gluten development. I would knead it for longer until it comes together and is no longer sticky or shaggy....you can wet your hands as that helps the dough to not stick to you....

    So fun! Now I can use my starter in other ways! I was wondering if you could share a sourdough sandwhich bread. I have a two year old and he really enjoys sandwhiches with nut butters and homemade jam. Do you make bread with your starter?

    Do you know how well these freeze? Like can we make a bunch ahead, freeze them. And use them when needed??

      Yes, just freeze them with parchment paper between each tortilla so they don't stick....or freeze them on a cookie sheet first and then out them in a ziplock....

      If I have a dough that doesn't turn out how I want it, I will fry it for fry bread or turn it into croutons or bread crumbs

    What can I do to save my starter if it doesn't pass the float test but does gave lots of bubbles and doubles?

      If you think it needs a boost, feed it some rye flour...however, if it doubles and has lots of bubbles it is probably just fine to bake with

      Also, I’m using a tortilla press which is making them flat and round, but as soon as I take them off the start pulling/bulking up a bit?

      I would just use less dough for each one and that should give you a thinner tortilla after it is pressed...

    Hello! I tried to make these today but for some reason, they turned out a bit thick and tasted like raw flour/gummy. Do you have any idea where I could’ve gone wrong? I’d love to make these again once I figure out my mistake!

      Did you get a response? I had the same problem. 😕 As I stretched/rolled out the tortillas they would shrink back. My husband thought they were good but I would love to get mine thinner as shown in the video.

      I make them and then we eat them but if you wanted to store them I would make a stack with each tortilla being separated by a sheet of parchment or wax paper, you could refrigerate for a day or two or freeze for longer...

    1. I subscribed to your email list and I have never received an email with any password. 2. I’m kind of bummed because I am eating the keto diet and I can’t eat breads and lots of carbs and things like that. At least not until I get to me Desired weight that I want to maintain. So I don’t know if I should make these and keep my starter or what to do with it!?

      It‘s actually an interesting question....could one make a keto friendly sourdough? Regular flour is out, obviously...maybe just do the experiment and start feeding your sourdough a mixture of almond and coconut flour and see what it does? Maybe your sourdough can ‚go keto‘, who knows? Although this particular recipe would probably turn out more like a thin pancake than a tortilla without gluten. It likely wouldn’t be suitable for wrapping things.
      Otherwise you’ll have to stick to regular keto recipes...there is just no way to incorporate normal bread in a keto diet.
