For 3~4 servings of Gochujang Jjigae
[ Ingredients ]
1. 4 strips of pork belly
2. 1/2 zucchini
3. 1/2 onion
4. 1 bag of enoki mushrooms
5. 2 potatoes
6. 1 block of tofu
7. 1 bunch of green onions
8. 2~3 green chili peppers
9. 1/2T stevia or 2T sugar
10. 2T red pepper powder
11. 1T minced garlic
12. 4T gochujang
13. 2T soy sauce
14. 2T tuna fish sauce or 2T anchovy fish sauce
15. A little salt
16. A little pepper
17. 1L water
18. 1T vinegar
[ Cooking process ]
1. Ingredient preparation
A. Cut potatoes, zucchini, onions, and pork belly into bite-size pieces.
B. Cut one block of tofu into appropriate sizes.
C. Cut green onions into large pieces and green chili peppers into thin strips.
D. Cut the bottom of the enoki mushrooms into 5cm pieces.
2. Make the seasoning sauce
A. Add stevia, red pepper powder, minced garlic, soy sauce, and red pepper paste and mix.
3. Put an appropriate amount of oil in a pan and cook the pork belly over medium heat.
4. Do not cook the pork belly too much, and when the pork fat comes out enough, add the seasoning sauce and stir-fry.
5. After adding the seasoning sauce and stir-frying, add water over high heat and when it starts to boil, add tuna fish sauce, vinegar, and various vegetables and boil. (Except for enoki mushrooms and tofu)
6. Add the tofu a little later and boil over medium heat for 20 minutes. 7. Lastly, add the shiitake mushrooms before eating, and enjoy them when they are cooked.
