How to Make Smashed Potatoes! Harvesting with Oliver!

  • Oliver and I head into the garden to harvest some of our Upstate Abundance potatoes, then we head into the kitchen to make a super awesome potato dish that I call "Smashed Potatoes" They are a twice cooked potato that gets tossed in butter, thyme, and garlic, then roasted till crispy and super delicious!

    Smashed Potatoes:
    1.5-2 pounds small potatoes
    4 Tbsp melted butter
    4-5 cloves crushed garlic
    1 Tbsp chopped fresh Thyme leaves
    Salt and Pepper
    Add the potatoes to a small pot and cover with cold water. Add about 1 tbsp of salt, and bring teh water to a simmer. Lightly simmer the potatoes till they are just done, or even slightly underdone, about 15 minutes.
    Once cooked, drain the potatoes well and let steam about 2 min to make sure they are totally dry. Toss them with the melted butter, garlic, thyme, salt, and pepper, then spread on a baking sheet.
    Using a pan, mason jar, or potato masher, gently crush each potato, making sure they stay mostly intact. Then spread out evenly on the tray.
    Roast in a 425 degree oven till golden brown and crispy, about 25 minutes.
