How to Cook with Shallots! Harvesting shallots, and making roasted shallots with thyme.

  • Let's talk shallot! In this video I harvest the Dutch Red and French Grey shallots I planted last fall, and then we head back into the kitchen where I make a killer side of roasted shallots with thyme.
    This is a wonderful side dish that goes along with practically anything, and is also awesome on crusty bread.

    Roasted Shallots with Thyme
    2 cups cleaned shallots
    1 tbsp olive oil
    2 bay leaves
    1 bunch thyme
    2 cups reduced beef broth, chicken stock, or water
    2 tbsp butter
    salt and pepper
    Preheat your oven to 400 degrees
    Heat a sauté pan over medium heat and add your olive oil. Once shimmering, add your shallots and brown well on one side. Resist the urge to stir, let them sit for at least 3 minutes. Once nice and brown on one side, flip the shallots and brown on the other side.
    Once both side are nice and brown, season with salt and pepper, add the bay leaves, the thyme, and the butter. Once the butter is melted, add the beef broth and transfer the pan to the oven. Roast for 15 to 25 minutes, or until the broth has reduced to a thick glaze, and the shallots are very soft.
    If there is no sauce left, or you over reduce it, you can add a splash of water.
    Remove the thyme and bay leave, and serve along side a roasted chicken, roasted butternut squash, on top of a steak, or spread it on crusty bread along with some, star cheddar!

    Perfect: plan to add this to my New Year’s Eve Le Grande Aioli platter. Just made some homemade beef broth for my prime rib gravy and thyme is my favorite herb. Looking forward to also trying this with cipollini 🧅 onions.
