I am from Ierapetra, Crete. Never once did I ever see them use bitter orange leaves whenever anyone I knew made them as I was growing up, but it would appear that someone did..also, my family uses honey in the mizithra as it combines better. Thank you tho for your version 😇
Hey I just bought 500g of Xynomyzithra and not sure how to use it. Can I use it in this recipe or its just better to use it in some other way? Also this recipe is pretty complex and time consuming for the amount of Kalitsounia I can get making it from 1/3 of the ingredients so maybe not worth it. Happy to hear some suggestions 😅
Hello there, Xynomyzithra is not suitable for this recipe but I have other suggestions for that particular Cretan cheese at my website if you would like to visit. Check out "Mizithropites" - cheese pies made with Xynomyzithra and can be eaten either sweet (with honey) or savory, I hope you like it!

I tried to make them yesterday, and the flour, which I weighed was far too much, so that the dough was super stiff and impossible. I did bake some just in case but they were tough and not worth the effort. Unfortunately I literally threw the rest of the dough in the trash. Hours of effort wasted. I can see that you are very capable and know what you are doing, but I measured everything carefully and cannot understand what went wrong.
Did you perhaps use strong flour instead of all-purpose? I'm assuming a different climate could influence the amount of flour you must add. If you could show me pictures or video of the dough I could perhaps tell you more about what you did wrong. I'm sorry it didn't work out for you... I make Kalitsounia with this recipe for many years.
I agree. 1.5 kg of flour was too much. I think I stopped anywhere from 1 1.2kg of flour. And for the amount of dough I made, there was not enough filling. So I just froze the left over dough.
