The trick here is to use Japanese mayo because Japanese mayo has more eggs in them then regular mayo and they aren't as greasy as regular mayo since they don't have as much oil so they tend to mix well and become sauce like that's why it's great to combine them with instant noodles since they'll mix well with the soup if you use regular mayo the oil prevents it from mixing so it will taste very greasy
I was so hyped to try the Kewpie mayo because I was seeing it being used in a lot of Asian dishes but once I tried it (it’s not that I was disappointed) but I realized it taste extremely similar to the The Mexican brand (McCormick “Mayonesa con Jugo de Limón” or lemon flavored mayo). So if you don’t have kewpie mayo available to you, you can use the Mexican one too

Mayo is disgusting and does not belong in this dish. Usually I like his recipes but not this one.
