How to Make Fresh Bread with a Bosch Mixer

  • What a welcome aroma greets family and friends when homemade bread is baking! Here's the recipe using freshly ground wheat and the Bosch mixer:
    1. Place the following ingredients in the Bosch Bread Mixer In the order listed:
    6 C warm water or fresh potato water
    1/2 C virgin olive oil
    1/2 C honey
    1 T salt
    1/4 t ascorbic acid
    10 C whole wheat flour
    1 C regular oats, optional
    1/2 C soy flour, optional
    1/2 C gluten flour, optional
    3 T active dry yeast
    2. Jog-switch until flour is well-mixed; then add more whole wheat flour gradually until the sides of the bowl stay clean.
    3. Knead on speed 1 for around 6-12 minutes until a good stretch is achieved. Turn out the dough onto lightly oiled countertop.
    4. Dough is ready to shape into loaves or use for date-cinnamon rolls; place in 150 degree (or slightly warm oven) and let rise for 25-35 minutes. Turn the temperature up to 350 degrees and bake until golden brown.
    5. Take out of the oven and place on racks.
    6. Optional: spread olive oil on top of the loaves and frozen orange juice concentrate or other fruit juice concentrate on the rolls as a glaze.
    7. Optional: After thoroughly cooling, you may place in bags and freeze.

    I really enjoyed your video. You all did a good job and there are things you did that I've never done. Like letting the bread rise in a warm oven and just turning the oven temperature up once it has risen enough. The other thing you did that I liked was to explain why there is no need to have a second rise just because the Bosch mixer is so powerful. Stay safe during the Pandemic. Thanks again.

We are along in years so the returning to normal life took a bit, but we are beginning to pick up the reins again. I have adopted your way of rising and baking bread.     I was surprised, I thought you over did the Gluten but it worked Good on 10 cups of whole wheat flour. The rolls where a great Idea also. I have the 800 watt Universal Pro mixer and its a good mixer and It is not a heavy unit which makes it even better. Nice video.

    This is one of the best Bosch demo videos on RUclips by far. No bafflegab, just right into it without missing a beat. I've had my Bosch, like yours, for almost 20 years. I have to say I was shocked when you opened the oven door and saw how much those loaves had risen LOL and I'm going to try what you did which I've never done.. I always let my bread rise in a warm oven but I take it out while the oven preheats up to 360.. and always wondered if I could just leave it in there.. now I know,, I can. Oh and that stove looks great too. Love vintage stoves.

    I've never been successful with whole wheat flour by itself, I mix it up with bread flour. Will try this recipe and hope it works for me. I also realized I was never generous with the yeast. Thanks for the video, very helpful!!! Please do more :)

      Hi Judy! It has been quite awhile since I made a batch with spelt kernels. I need to try that again to answer "would it work AS WELL..." Your second question, I don't know the answer to. Have you been making bread with sourdough starter for some time? It has been a LONG time, but years ago, in a friendship kind of "passing it on," I have a memory of someone giving me some starter, and I made something from it. ... Just a nice memory now! If you do try making this recipe and experimenting with adding sourdough starter, I'd love to hear how it turned out! HAVE FUN in your kitchen!

It would take all of the guessing out of it, time saved and cost of ingredients as well. The Internet is chockful of conflicting advice! I would like to pass on to you, though, the best of the recipes that I have discovered: (1) The first would be the video by Claire Saffitz on RUclips on how to make sourdough bread; (2) the second would be by Baking Instructor, Baker Bettie, on how to make Wholewheat Honey Pan Bread---it has lots of great flavor!       Because of the Bosch's kneading ability. I think it eliminates the need for a rise? I saw it in the infomercial although I'm not sure if it is true.

I looked at the oil on the countertop and at the dough I rolled out for the fruit rolls again! It seems that the dough did come up easily. Did you just think that it didn't look like much oil? ...     You have very strange ovens in United States. I've never seen ovens like that here in Europe. A grill element at the bottom instead of at the top, what is that good for? And the stove top with spirals, very strange. Our ovens here are first of all way smaller. Nowadays, it is common with a totally flat ceramic stovetop, often with induction heating. I guess for easy cleaning. The old fashioned ones were flat discs in cast iron. Spirals on the stove top is a very strange idea. And must be a horror to clean. We have a grill element at the top of the oven for roasting steaks or something, which is seldom used. Nothing at all at the bottom. Plus fan heating, which most people don't use. The heating element in the oven are otherwise hidden. I guess it works like a crockpot or something like that, where the heating element is outside the oven room itself. And our oven doors are not that noisy :-D But I do envy your large size ovens.
    I never get whole wheat bread to rise like that. And there is two reasons for that: We don't have hard whole wheat at all, only an all-purpose variety. And I have not been adding extra gluten.
    I watched this video because I want to buy a Bosch. I have struggeled with a Hotpoint Ariston stand mixer (same as Kenmore), and an Electrolux Assistent (same as Ankarsrum). I really don't get any of them to work good enough. The Hotpoint was working beautifully, until I discovered bread flour in shops. Bread flour works much better for rising, but it definately makes the dough creaps up the hook and make a mess. So the Hotpoint is not that good anymore. The Electrolux worked beautifully once, but next time it would not knead properly. I have tried both the hook and the roller and everything in between. My aunt said that I had to buy a Bosch. She has an old one, and told me they worked like magic. So I'm on the look for a second hand one, or a new on sale.
    If I was whipping stuff, or baking cakes, I would have more than enough with my Hotpoint. Or just a hand mixer. But I never do such things, only make bread. And since the dough have come crawling up where it does not belong, it have been a mess each time (after I switched to a more gluten rich white flour. All purpose worked fine, and it worked very fine with whole grain all purpose). I see you don't make a mess at all with your Bosch, so I am convinced.

      US ovens generally have a broiling element at the top of the oven and a heating element at the bottom. The coiled elements you see are an electric stove. We also have gas, glass-top electric and induction stovetops available for purchase, too. However, the electric coils are by far the most common as they are often the cheapest option.
      To your cleaning question, I find glass ranges harder to clean because every streak and small mess shows instantly, but the coils and the little bowl they are in are removable. The bowl can be a pain to clean, but if you wrap them in foil, you can just toss the foil.
      My personal favorite is gas. Just remove the top, wipe down and put the top back on.

      Thank you for your comments! I am sorry to be responding so late! I hope that by now you are having better success in your bread making. Did you end up getting a Bosch? I have seen some ovens in Europe, but I have not used them extensively. I do like to grind my wheat freshly before I bake bread, and I do believe that various types of wheat yield different results. I really hope you are getting the results that you want! !!! THAT is so satisfying or perplexing!! :) SUCCESS to you!!

    Do you have a good recipe that is gluten free? I can not eat any gluten.🥹. I adore Bosch. I have a unit still from the 70’s going strong!
