    Thank you very much for the video..Each one does as they want... i never use gluten or dough enhancer and i do freeze it when i take it out two or three weeks after all is perfect ...less we put things other than natural simple things the better for our health it is...each one does like they want ..,

    Great Video...This is exactly how I have been making my bread for the last 25 years. Only difference is, I add about 2 teaspoons of my homemade Raisin Vinegar. By the way, I’ve had my Bosch and Wonder Mill grain mill for these 25 years. They still work perfectly!

    hey guys this is torey. question. what does the different noises mean when the bosch mixer down shifts once you add your flower? and why does the bosch makes the noise while kneeding the bread?

    Glad to see you using all wheat. Other people are adding bread flour to their freshly ground wheat berries which makes no sense. I use the Wondermill and a Zo bread machine to knead.

      +swatts1195 Thats awesome. :) The Zo bread machine is really the only bread machine on the market that can knead whole wheat bread and give you the results you want!

    Im curious as to the measurments for 1-2 loaves rather than 5 =) Looks like an excelent recipe but we would never go through that many at a time...and frozen's not my favirite.

    I have used your recipe minus the "fresh" flour. But since I now have my very own Bosch Mixer I'm seriously conteplating geeting me a Nutrimill to mill my own flour. Thank you

    I love your videos. I wish you would make more. I make my own breads all the time but I have not made my own flour. I have noticed that you used dough enhancer and vital wheat gluten. My question is do I always have to use those ingredients to make my own all purpose flour or is it just for this recipe, or should I always use it for bread when making my own flour. Could you expend on those two ingredients. Also would you know the best or good source when buying wheat grains. Thanks you so much for your video.

      Gluten gives extra structure to the dough, making it sturdier and able to trap air and rise well. Dough enhancer (look it up on Amazon for more info) contains lecithin. It makes the dough easier to shape and keeps it fresh longer after baking. I use both of these in every yeast dough recipe. I buy wheat berries at my local health/natural food market in bulk in paper sacks the size of large bags of dog food. I keep it in a 5 gallon bucket with a screw-on gamma lid.

      Hi Monika! My apologies....when I made this videos I knew nothing about RUclips and I didn't even know to check comments. To say I'm shocked all these years later is an understatement. I know its been awhile, but how is your baking going? Since I made these videos so long ago, I have perfected the recipes to not use gluten and dough enhancer, but to use a little white flour and apple cider vinegar....I'm happy to share more if you get this comment!

      +Copperhouse Farm Vegalene. You can buy it at GFS or online through Amazon. If you are local to me I sell it, as well.

    Hi Kim, Thank you for posting your videos. I am so inspired by you and appreciate the time you are taking to help others. I''m trying to make my own bread but my mill doesn't grind the wheat as fine as your Nutrimilll does so I'm not sure how to proceed. I tried going forward with your recipe but the bread didn't rise and doesn't look like dough but rather soupy, chunky bits of wheat sitting in the bottom of my bowl and it is starting to smell rancid. I'm using a champion juicer with the grain mill attachment and I have it on the finest setting but the flour looks like little pieces of wheat not flour. Should I try to mill it again or can I do something with the wheat to help break it down? Thank you for your help.

      If you bake bread regularly, the Nutrimill is definitely worth the $200 investment. For your current situation, you might try one of these ideas: (1) Sift your flour to remove the biggest bits. (2) When mixing, add half the flour with all of the liquid and other ingredients. Put the lid on the mixing bowl and let it rest for 20 minutes. This softens the wheat and gives the yeast a head start. Finish the recipe as usual. (3) Try using a combination of your milled grain and some unbleached flour. (4) Be sure to use the gluten and dough enhancer. They really make a difference.

    I thought your suppose to let the dough rise for an 1hr before putting it in pans and then let rise again and then bake

      That's one of the advantages of Bosch. The dough hook kneads so well that the first rise before shaping isn't necessary. This really speeds things up. To get a fast, light rise in the pans, this is what I do: Bring a pan of water to boil on the stove, then pour it into a 9x13 pan set on the lowest oven rack. Place the loaf pans on the middle rack and close the oven door. Let the loaves rise in the steamy oven for 20-30 minutes, until the center of the dough is at least 1/2" above the sides of the pan. Remove the pans and the water from the oven. Preheat the oven (this gives the dough another 10-15 minutes to rise at room temp.). Bake the loaves as usual. I've been using this method for years, and it's a great way to gently speed up rising for any yeast dough.

    Do you filter/screen your flour? I have a Nutrimill and don't screen anything, my dough is not as soft as yours. Don't get me wrong the breads are great but my dough is much stiffer. Your dough looked sticky coming out of the mixer, maybe I need to add more water? For a 3 cup recipe, a 1lb 14oz loaf I use 3/4 cup. I always get a good rise but takes about an hour in my oven. I like my loaves higher on the edge than you do. :-)

      Maybe you need to grind it finer? It could also depend on the type of wheat. I use prairie gold from Wheat Montana.

      Thanks Kim, I've been giving it one rise and the bread turns out great without CO2 pockets. I'm going to experiment with autolayse for soak times after mix so I can cut down on sugar addition. The yeast is supposed to feed on the flour starches when they break down during a long soak, 1-3 hours before yeast addition.
      Thanks for the video...it actually helped put me on the path. :-)

    Great video, but you do know that baking spray isn't the healthiest thing you could use to "grease" your pans.... there are chemicals in there. You'd be better off using butter or oil..

    I use machines because we only eat home made bread and I make it every week, lots of it. I have trouble with big batches of bread like she makes. So I use a machine. bakeries use machines also but for me its a hobby and a necessity plus I have arthritis in my hands so I knead bread with machines because I need bread.

    Is it healthy? I mean yes whole wheat is way healthier than all purpose white flour but adding so much butter, so much brown sugar, honey, oil etc makes it kinda unhealthy doesn't it? especially for someone who needs to control the amount of sugar and fats they consume?
    Btw I am so attracted to her 🙊 wife material from what I saw so far 🙈💖

      A cinnamon roll is a cinnamon roll. They are a special treat. :) but, if you make them from scratch they are healthy underneath all the butter and brown sugar!

    sure would be nice if you were telling people how much ingredients you were using of each water oil doesn't help when you don't tell anybody anything it's pretty hard to copy a recipe when you don't say anything about how much you're using.

    This is idiotic. She has a $1000 worth of equipment. What happened to simplicity etc. this is more of a demonstration of this lady's ability to own and use expensive equipment than it is to teach us how to live healthy by eating healthy

      +Ed Allen I understand what you are saying, but investing in equipment that will work for you and give you results that will simplify your life is key if you want to bake your own bread from scratch. I don't live in my kitchen but my family eats healthy breads and baked goods because I make my machines work for me. And, its not $1000. ;)

      I thought of that for a fleeting moment until I started baking bread for my family by hand. It was time consuming and I had to do it often -- too much time in between. If these items will help, then as a busy momma, I'm willing to try. :)

      Moron, a Bosch mixer is similar in price to the popular name brand stand mixer. I bought a Bosch after that ‘other’ brand couldn’t cut it (2 machines in 7 years), best INVESTMENT I’ve made in years.

      I'm not sure her video states that she's teaching those who's watching how to eat healthy. I think the point of her video for those who are watching- is to get instructions on how to mill your own flour and make bread. so I'm not understanding your rude comment. Let's learn to teach one another through a little bit of love. The machine as she stated before is a $200 investment. Some people send more that that a month on alcohol, beer, Mc Donald's etc. and to some, that would be idiotic.
