3:00 The big reason you shouldnt make pizza dough in a food processor is they are not designed to handle that amount of torque thrashing. If you keep making pizza dough in one, it's motor or drive shaft will fail a LOT faster than if you didnt. Even a $100 chinese offbrand standmixer will stand up to making pizza dough long term a LOT better. I know from personal experience, killed my brand new cuisinart after a few months, cheapo standmixer has held up fine to being used even more for dough over 5 years.

Using a food processor to make bread is similar to the Chorleywood process, which is how the majority of bread is made in the UK. On an industrial scale it's a little bit different since they control the temperature and pressure during mixing to ensure consistency (and also add dough conditioner), but it uses a similar high speed shearing to develop the gluten.

The consistency of the pizza will change quite dramatically after sitting in the pizza box for any amount of time. You might remember it differently if you normally eat a slice right there vs transporting it home in a box

I think you need to check the water qty on this recipe. I tried it twice and both times I ended up with a very dry dough. I had to add almost 1/2 cup more water to get it to resemble anything like yours.
There is a pizza place in my neighborhood (Leonardo's in Sunnyside Queens) that makes almost this exact pizza - Sicilian style with pepperoni cups & hot honey. It is freaking DELICIOUS
Do you have a part number for that pan? It looks like it's cold rolled steel, and I don't see it in the Babish store. The closest I've been able to find is the Winco SPP series of pans, but those don't look as tall as yours.
Closer to Buffalo NY/Upstate New York pizza. Very similar to what you'd get at somewhere like the Bocce Club or Imperial Pizza (which are typically considered the best classic Buffalo style).
Maybe throw the dough with the cheese into the oven first for 5-8 mins. Get the cheese a lil brown here & there, then add the rest & continue baking until cups .
7:33 Going cheese on TOP of the pepperoni might as well be herecy. I like mine to crisp up to the point some of them are like chips. The cheese you put on top seems to have stopped almost all of that from happening.

I find it's better to add any drizzle (hot honey, balsamic reduction, barbecue sauce, wing sauce, etc ) on the pizza AFTER baking, but before cutting.
Hot honey and goat cheese (or crumble feta) is my go to.
