Perfect Pancakes | Lodge Carbon Steel Griddle with Copper Diffusers

- This is a quick video is to show a method of cooking pancakes on a Lodge carbon steel griddle (amzn.to/2mruufJ) with two copper diffusers underneath (amzn.to/2EDO4wA). It is not intended to show a recipe for pancakes - use your favorite recipe. Copper diffusers and cast iron/carbon steel are a match made in heaven! Using the diffusers provide an even temperature all the way across the griddle, creating the ultimate cooking surface for pancakes. With the griddle stretched between two burners, there would be hot and cool spots without the diffuser. The area of the griddle over the front griddle is a little hotter than the back because my front burner was running a little hotter.
Copper diffusers also work amazingly well when slow cooking in enameled cast iron on the stove top. You get even temperatures with no scorching in the center.
I am also very fond of using an infrared thermometer to monitor cooking temps on a griddle or cast iron skillet. They aren’t expensive at all and I have found mine to be an incredibly valuable tool when the cooking temp really matters.
After seeing this video you might be wondering if the diffusers will work with the Lodge rectangular, reversible cast iron griddle. I tried it and it doesn’t work. The diffuser needs to have direct contact with the griddle, and with the way the cast iron griddle is made, there is not enough heat transfer.

Thank you for including the surface temperature using the IR temp gun. Inexpensive tool nowadays and I feel most RUclipsrs neglect to mention the heat level.

Now your talking my language. Try ghee butter with scattered brown (or white) sugar, and it makes a caramelized and buttery surface for crispy sweet cakes at the same time.

Thanks for sharing! Most people use a scoop of some kind, but I've been using a condiment bottle like you for a long time. I think it started with me wanting to draw shapes for my kids when they were little... I don't have a copper diffuser nor a griddle.. I do have carbon steel and cast iron pans, so I think that's good enough to do a number of pancakes at the same time. If I wanted more space, I could take out a portable / camping stove of some sort and stick another iron pan on that thing for cheap.

Thank you, I was looking for a way to utilize my gas stovetop more efficiently - right now I get a lot of hot spots if trying to cook at low temp. I just bought 2 of the diffusers from your links above as well as the carbon steel Lodge griddle. Would have taken hours for me to find a combo that fits. Also thanks for the egg white tip.

Using an infrared thermometer. Definitely a pro-tip. I personally have a (relatively) cheap handheld thermal imaging device from FLIR that lets me visualize hotspots.

That's a good idea using copper because with cast iron you don't get even heat distribution
Cast iron will heat evenly if you give it time. He's using copper diffusers because he is NOT using cast iron; he clearly states and it is obvious by looking that he's using a carbon steel griddle, which is thinner and lighter than a cast iron griddle.
I have a griddle but it's so heavy so I started looking for reviews on the lodge and just like that Poof you show up! My go to for honest opinion on all things cookware. So I have to ask did you leave the seasoning on this since it's carbon steel or did you strip it and do your own like on your CI? I know this is old so If you don't see this no biggie

Good morning. I have a griddle almost exact to yours. It is a very heavy in weight. Well over 10 lbs. 18"x12". I bought it at a mexican market with no box. I am trying to determine if it is carbon steel. I want to season it but I made the mistake of heating it on my glass top stove and the pan got these circular hot spots. Cannot get them clean. I have tried boiling water and SOS pad, brillo etc. I want to clean it to season it correctly. Any advice?
they will never come off, but they dont need to come off lol. Just clean it normally and season it

So glad you’re posting vids again! This was helpful- I’d never heard of copper diffusers before! Now I might finally be able to use a griddle on my glass top stove. Several reviewers of the carbon steel griddle on Amazon mention their griddles warping (which would render it unusable on my cooktop); do you have any tips for avoiding that happening, or is it just a risk we have to take due to manufacturing variations? Thanks so much for this, and all your great vids!
This griddle was actually designed to be used outdoors, not on the stove. People who have had warping are heating the piece too quickly, according to someone I spoke with at a Lodge store. I have had mine for a long time now and have never had an issue.

I have the pro-logic griddle. Did I read you right that the diffusers won’t work with it? Love the cooking area but I’m stuck making two pancakes or just using my 10.5” griddle and one at a time.

Hi Jeffrey, I’ve been following you here on RUclips and Instagram for a few years. Thanks for all of the info on cast iron. One thing I’ve never been sure about is how to prevent warping when using cast iron on the stove. I currently have a glass cooktop and am afraid to use any of my vintage pieces for fear of warping them. Are there proper preheat and use guidelines for using cast iron on the stove? I’d hate to damage my pieces. Thanks again!
