Thanks for sharing! Most people use a scoop of some kind, but I've been using a condiment bottle like you for a long time. I think it started with me wanting to draw shapes for my kids when they were little... I don't have a copper diffuser nor a griddle.. I do have carbon steel and cast iron pans, so I think that's good enough to do a number of pancakes at the same time. If I wanted more space, I could take out a portable / camping stove of some sort and stick another iron pan on that thing for cheap.

I just bought 2 of the diffusers from your links above as well as the carbon steel Lodge griddle. Would have taken hours for me to find a combo that fits. Also thanks for the egg white tip.
Now your talking my language. Try ghee butter with scattered brown (or white) sugar, and it makes a caramelized and buttery surface for crispy sweet cakes at the same time.

Good morning. I have a griddle almost exact to yours. It is a very heavy in weight. Well over 10 lbs. 18"x12". I bought it at a mexican market with no box. I am trying to determine if it is carbon steel. I want to season it but I made the mistake of heating it on my glass top stove and the pan got these circular hot spots. Cannot get them clean. I have tried boiling water and SOS pad, brillo etc. I want to clean it to season it correctly. Any advice?

One thing I’ve never been sure about is how to prevent warping when using cast iron on the stove. I currently have a glass cooktop and am afraid to use any of my vintage pieces for fear of warping them. Are there proper preheat and use guidelines for using cast iron on the stove? I’d hate to damage my pieces. Thanks again!
How can you say they were perfect when you flipped them ? It sounded like each one went ' bang ' ? Hahah had to say it . I have a Blackstone griddle just havent used it yet .

Cast iron will heat evenly if you give it time. He's using copper diffusers because he is NOT using cast iron; he clearly states and it is obvious by looking that he's using a carbon steel griddle, which is thinner and lighter than a cast iron griddle.

Several reviewers of the carbon steel griddle on Amazon mention their griddles warping (which would render it unusable on my cooktop); do you have any tips for avoiding that happening, or is it just a risk we have to take due to manufacturing variations? This griddle was actually designed to be used outdoors, not on the stove. People who have had warping are heating the piece too quickly, according to someone I spoke with at a Lodge store. I have had mine for a long time now and have never had an issue.

they will never come off, but they dont need to come off lol. Just clean it normally and season it
