James Ryan.... Have you ever had hot tea with cardamom in it? A Persian man fixed me tea a few times...made from real tea leaves etc, then strained; it was delicious!! I've never had it since. But it was the first tea I never added cream/milk to tea. I'll a big tea drinker. I like regular flavored tea, not flavored normally....except...TAZO Chi Tea you can buy a cartoon of it at the grocery store. Get about 7-8 cups compared to the one cup you buy at Starbucks who uses the same liquid to make chi tea latte. They also sell the box of liquids but it's cheaper at the grocery store. I think it has cardamom in it to along with other spices. I LOVE that stuff!!! Water is the key to a good cup of tea too. I only use spring water. Refuse to use tap water, even filtered. Tetley or Salada tea are the best. Used to use Lipton but stopped. Sorry to get distracted talking about tea. But pancakes and a hot cup of tea go hand in hand... And don't forget the bacon!! lol. Looking at this video, you just solved a stove top problem for me. I had been using the Lodge pizza pan as a stove top griddle; but at 14 inch diameter is very large for a regular sized stove, so I usually straddle across two burners and rotate the pan every two minutes in order to prevent hot spots. I previously had bought two of the bella copper plates and realized just now that I could probably use them on two burners and then set the pizza pan across the top of them and it would be thermally one homogeneous surface. That would save me a lot of future rotations. Still learning from you after all these years, LOL... Thanks!
Yay! A new recipe and tips. Those first pancakes were perfect, instead of pale imitations. Interesting on the copper diffuser too. I need a griddle and you certainly make a good case for cast iron. Thanks.

@@verlyndateague5618 I got an induction stove about 6 months ago and I am loving it! Glass top, but induction cooking means that the magnetic field is applied directly to the pan itself making the pan the heating element, generating a perfectly even heat across my iron.
I purchased the glass top as well. It's not induction, but it still works really well with my cast iron skillets. It doesn't matter if it has a heat ring or if it's just a flat bottom, they all work well.

Do the diffuser plates need to be in direct contact with the cast iron? I got a rectangle Griswold griddle which has a lip on the under side. An 8" diffuser plate will sit in this area, but the lip lifts the griddle over top of the diffuser plate when it rests on the stove top. I guess I can just try or I can buy a wider diffuser plate and that will have the griddle rest on top of it all together, but there will be a bit of an air gap between the diffuser and the cast iron.
They look yummy, i myself love using the cast iron to make my pancakes. though mine has grooves on it, but still come out well. I often use vegetal or canoli oil on mine and often use brush to coat it, though leave a little extra oil as partially fries the pancakes a bit.

I have a round cast iron pancake griddle. And an electric stove. Do I have to use a diffuser ? Will it get too hot without one? It sits directly on the electric stove burner.
I was here to see the small griddle (I have the two-burner which is really too big for one person, and heavy!). I never knew about the copper diffuser! The hot spots in cast iron are very apparent when I try to cook stuff like bacon or pancakes where it is hottest where the flame is touching the skillet. The diffuser would be great! Was also thinking of getting the griddle for my small gas grill.
Now I know what my Wife can get me for Christmas, I'll even go for a Factory Second :-) My Wife also Loved your Mom's Mac & Cheese that I made for her, paid BIG dividends............. I will have to try the salt and your other little tips. My round griddle is so much thicker around the perimeter that the temperature difference is to much to work with. Those pancakes look perfect!! What exactly makes them not stick to the griddle? Is it letting them cook long enough? Is it the heat? Just curious. We just got a lodge castiron griddle and are trying to figure out how to use it. I've never used castiron before and I'm finding there seems to be a bit of a learning curve. Any advice or explanation is much appreciated!!
Have you tried small cast iron pans for preparing raclette cheese for potato and cornichons dishs? It would be inconvenient to broil large wheels of raclette with a broiler setup at home or to buy a specialty raclette machine. I would prefer to get a set of small cast iron pans to broil cheese in the oven and would have multiple uses and good heat holding properties to maintain residual heat for melty cheese. Would like to see you try this and perhaps suggest some recipe variations, perhaps potatoes with garlic or peppers and diced Italian cured meats for topping with the raclette.

I'm moving to a new house with a induction range. Is a diffuser needed for an induction range? If so, do they make one out of ferrous metal that would work?
Cookware needs to be magnetic to work on induction cooktop. I had to replace all of mine, so i know :( copper isn’t magnetic, so it won’t work as a sheet like that unfortunately.
i need that diffuser because what people dont tell you is when using cast iron on gas fire ovens, the way the flame hits the cast iron is where the most heat is gonna be at where it looks like most of your food is being heated or burns on a certain spot than the other

@@TheCulinaryFanatic this is disappointing cuz I have a very nice Field CI skillet but it has a raised ring on the bottom so it would only be in direct contact with the diffuser on the ring and NOT the majority of the underside of the pan :(. Wonder if there's a hack to make it work...
I'm not crazy about Bisquik pancakes. But if u like IHOP pancakes (and no I don't work for them, never did, never will cuz I'm retired from the Corp world) you will love HUNGRY JACK brand for making pancakes. They are light, fluffy and oh so very delicious, don't have to add anything but water to the instant mix. Give those a try! I was disappointed in this because I thought u would show how u made pancakes from scratch... Not using Bisquik, but instead.... flour, eggs, etc. This seemed more like an ad for LODGE and the COPPER grill sheet. Thanks for the copper tip, I didn't know that at age 67. So it wasn't a total disappointment, just a little. I'll keep watching. Thanks for sharing. L :)

Heat the griddle up first then toss in the diffuser.
Heats more evenly when heated on the diffuser.
