You got the like when admitting that hitting fast to the body of the person at the net is perfectly acceptable. More people should start acknowledging the risk of going to block a bandeja at the net!
Opponents destroyed me with this today in local league. I tried to go with confidence, but i just kept hiting them in the glass, or they were bouncing super high. And as you say in the video, when they saw i struggle with it, they kept using it as a “get out of jail” card whenever they were in trouble. I guess I need to work on the bandeja technique here, felt very irritating. I was thinking that more advanced players just kick x3 these balls, is that the case?
A friend of mine uses the high lob when serving. According to the rules I ofcourse can't volley the lob and letting it bounce often results in the ball getting out of the court. How do I deal with this now? Can you make a video about this? I can't find any information about this technique.
There really isn't any specific technique for something like this. You're right in that you can't volley the serve. The only thing I can suggest is - try to time the bounce and block/volley the serve back. If that type of serve always bounces out, either you haven't tried to block/volley right after the bounce or you're too far away from the bounce. You may cross the service line if it's a short bounce (closer to net) within the service box.
I have an idea for you. The customer pays around 10 dollars (idk about the pricing) and sends a video of a match to you. Then you comment and tell what the customer is doing wrong and what to do better and how. Do you get it?

Body shots are seen as "rude" but really most of the time they are a sensible tactical play!
