I baked the cake with my son. It was an excellent cake. Tastes fabulous and looks exactly as in the pictures!!! I baked it for extra time as mine is a convection oven. Both cakes came out beautifully. Sealed it together with jam and the icing, and coated it with the icing and chopped, fresh strawberries. I love Ella's recipes.. Haven't baked in a while, so this was a joy.

Made this but used a LOT less maple syrup and wish I'd read the comments before and whisked the chickpea water first, but all in all it turned out well and my non vegan friends enjoyed it too.

I absolutely love this cake. All my friends and family love it, too. At first they didn't even realize that it was actually vegan. I tried it with both almonds and walnuts, it's just as delicious both ways. I like to use medjool dates instead of maple because it makes it taste more like non-vegan cakes, which is better if you are making it for other people. Thank you Ella for this amazing recipe! ❤
I made this as per the directions. Unfortunately, it sunk a lot in the middle and I was left with a huge crater in the middle of both cakes. I think it needs to be cooked at a lower temperature for double the time. The flavour was good and the texture of the cooked outer part was lovely. Next time I would cook at 160 degrees celsius for 45 minutes. The icing is amazing, flavourful and glossy. It didn't set so next time I would double the coconut oil. This recipe has huge potential so I am happy to persevere with it.
Sunk= undercooked. So you probably can keep the temp the same and add time. Try the toothpick test. Put a toothpick in the very centre of the cake. If the tooth pick is covered in batter, put it back in. It will sink in the middle and be raw. If the tooth pick has a tiny amount of crumb, take it out. It will continue to cook outside of the oven and be moist inside. If the tooth pick is clean, definitely take it out. It is overcooked. It will still taste fine but be a bit dry on the inside.

I've tried the icing, it's absolutely fantastic, the texture is beautiful and the taste fabulous! Thank you! Regarding the aquafaba, I think it would work best if you would mix it before and stir it in, works just like the egg whites and gives extra fluffiness. Just a thought :)

I'm not able to enjoy watching the recipe being madr cause I get distracted by the excessive back and forth of the camera between you explaining the recipe and the actual recipe itself. Mayra Castro I heard Ella already answering people on this channel about replacing almond meal for coconut flour. But because coconut flour absorbs so much more liquid, the cake would be very very dry! So then you must increase the liquid and that’s a lot of experimentation to be done, so good luck if you’ll try to do that, but it’s going to be a challenge for sure. Maybe it would be easier to use normal flour for starters!
Beautiful cake! Do you use homemade almond milk in baking recipes? I hate store bought almond milk so I make my own but it doesn't heat well , it becomes lumpy. So I'm wondering if that also causes a problem when baking since that wet ingredient changes texture when heated..

I’m not even sure there’s anything to substitute it because that’s what gives cakes the rise, otherwise you’ll be left with very flat, dense cakes. Bicarbonate of soda lasts years in the cupboard but if you’re a regular baker it’ll soon be used up. :)

@@zoedark7101 I buy polish jam (I live in UK) which now and again is available in Lidl during its Eastern Europe weeks. It has a huge "100%" on it and it's made without added sugar. It has info on the package that 100g of fruit was used to make 100g of the product (or something like that).

Jenny Where on earth did you hear gluten isn’t good for you?! What nonsense! It’s an essential part of a healthy balanced diet, that’s been scientifically proven as the above commenter as mentioned. The only people that need to avoid gluten are coeliacs.
It’s nothing to do with the gluten!! It’s just flour really spikes your insulin which isn’t great and means you crash and dip and you’re not burning stored fat

It's not a direct swap sadly as the maple is a liquid so you'd need to change all the other ratios too and add more liquid to use coconut sugar x

I use unsweetened normally and I'd store it at room temp for about five days xx

Zoe Dark Ella uses st dalfour jam, it’s 100% fruit and no added sugar x
