Friendly reminder that pumpkin spice doesn't actually contain pumpkin, it a mix of the spices that usually go with pumpkin. I found out a while back that a lot of people don't know that, lol. Just like how hamburger helper doesn't contain hamburger, you mix hamburger in with it. That coffee looks really good tho

A syrup with actual pumpkin in it give your coffee a really grainy texture, it’s kinda gross imo. Best to just stick to syrup infused with whole spices

Pumpkin is the bomb and so few realise. Pumpkin soup, pumpkin scones, roast pumpkin… if you bake it in the oven and add on a little brown sugar, after a while the pumpkin almost has a caramelised taste. Sort of savoury and sweet.

No matter how you bake it, fresh roasted pumpkin will always have a lighter, milder flavor and be more watery than canned. To fix this, after you purée the flesh, put it in a saucepan on its own for 20-30 minutes on medium low heat, stirring occasionally to prevent burning. This will cook out some of the water, and slightly caramelize the sugars, enough to give a richer, more flavorful product similar to canned pumpkin
If you want the typical pumpkin color (and with much more flavor) go for a Cinderella, pink, or blue pumpkin.. they have a lot more meat to them and so much more flavor and the color is spectacular! It's so much more pumpkin for the price and you can use it not just for sweet things but also savory things..

I imagine if you're using it for something like coffee, though it can have a little bit extra water content, making a difference, since you're just adding it to flavored water essentially.

If you want to preserve the pumpkin syrup longer and make a stronger more caramelized pumpkin flavor cook or bake out a significant amount of water from the pure pumpkin puree before turning it into a syrup. Totally worth it, also do this for pie or any pumpkin baked good if you make it.

Honestly, I've made pumpkin desserts from both the can and homemade puree and they taste the exact same. It was so disheartening when I put all that effort in just for it to taste the exact same as if I used a can. Even looked the same. So my suggestion to everyone is bake it from scratch once to say that you did, then save yourself time and just do it from the can
My favorite local coffee shop actually makes fantastic pumpkin lattes and cold brew. They didn't make their own fresh pumpkin, but they did use pumpkin pie filling or canned pumpkin + they made their own filling if they couldn't find the pie filling. Got my sister to make her lattes that way at home. Delish.
Don't forget to add pumkin spice seasoning thats what gives it the actual flavor that people like in pumpkin spice lattes. You don't really need real pumpkin
Most people don't know the majority of canned pumpkin isn't even pumpkin. It is a mix of winter squash. There are a few companies that do have 100% pumpkin but you definitely need to read the labels
