Thank you for this very informative video. The section on how you operate the custom menu was particularly helpful. Two additional comments The hole caused by the collapsible paddle is a problem. What I do to alleviate this is that before the commencement of the bake cycle, I pause the machine and then remove the collapsible paddle. At this stage, the product is still malleable. I then replace the product in the tub. The result is that the hole in the bottom of the bread is a uniform and small hole and certainly when the bread is sliced virtually not noticeable at all. Before returning the product to the tub, it is desirable that you simply wipe or clean the rotating shaft now devoid of the collapsible pedal. The second comment is that in the manual I got with my machine there is a recipe for sourdough which advised me, inter alia, to use the “French” setting. It is clear however from the program on my machine and indeed on yours that there is no such standard French setting. What you have to do is to come up with your own custom setting suitable for making sourdough. I am looking for such a setting.
Crusty Loaf is actually the same as French Bread. See the description for the Crusty Loaf program in the manual. French Bread is bread with a crispy crust and fluffy inside. For bread makers that have the French Berad program, the total duration of the program is longer compared to the Basic program. It's all the same as the Crusty Loaf program in Breville the Custom Loaf.
I just started using my machine and no where in the manual does it state to press the selector to advance to the next option. So thank you for showing me that. I'll probably have to watch again prior to baking my next loaf. Color me embarrassed. Hey, at least I'll try again!

Hey susannaaddai, I like to use room temperature water with my recipes usually as the bread machine will heat up as it needs to. You may consider purchasing new yeast too - I've had many failed breads because my yeast was old and didn't help my bread rise. I hope this helps!

I just had this machine delivered to me today. Love the machine. Will make bread tomorrow. It did not come with any paperwork. I am not about to send this back. But I have a question for you. I use a pre mix for flower from a flower mill. All I have to put in is the water , mixture, yeast . I would like to know the measurements for a big loaf with a premix?
Liquids should be heated just a bit above room temperature - here's their statement from the manual "(Ingredients should be) At room temperature 20°C-25°C (68°F-77°F), except all liquids which should be 27°C (80°F) unless stated otherwise. I made the Honey Whole Wheat Cinnamon Raisin Bread and the raisins did not dispense at he proper time. They dispensed almost at the end of the bake cycle. The loaf tasted great, however, no raisins . what is the solution?
Ive tried twice & bread was dense & hard. i am very experienced making bread & using machine. my Zo died & decided to try this. i used one o my recipes i know works & it did not. yeast was within dates. i'm wondering if the issue is the bread flour. never had that b4. i tried bake & dough which is all i ever used. it did not raise & was like a brick. i always measure my flour like u suggest. have done it for years. should i have used the modify to increase raise & knead times? going to buy more bread flour bc i did 2 2# loaves & used 8 cups of flour. I did temp the water. i also made a whole in center for yeast. also added dough conditioner& diastalic malt. should i have remove some flour. the recipe has 1.5 c of water & milk. i had to add some bc dough too dry. HELP
Sorry to hear your bread maker woes! That is a tricky one, there are so many variables when it comes to bread. Yes, trying new flour (and less amount of flour) is a great start. You've done everything elses I would think to try (fresh yeast, warm water, etc). Let me know how that goes! Hopefully it will be better with less flour.
In the book it tells you to do that at the very beginning of the bake cycle. I haven’t bought one yet but found the book online and have been reading it. Each page is getting me closer to buying it lol. Just came to RUclips hoping to hear it mixing on a video so I know if it’s quieter than my old one. That one makes me jump a mile when it’s all quiet coz it’s been rising and then it mixes again to punch it down! Being able to mute the beeps would be a huge improvement (that’s why I bought the Breville Combi Wave 3 and I love it so much!) but I’m hoping for quieter mixing too.
@Chef Martin, the Breville Custom Loaf manual does not have a recipe for 100% rye bread. I would suspect the bread machine would have a difficult time kneading such a dense bread dough. You could, however, knead the dough yourself, and use a custom function on the machine to raise and bake the 100% rye dough bread. I hope this helps! 👨🍳

I just bought this machine. Ive read all the instructions, although the booklet is different to the one you have. The problem I have is that the knob turns but nothing moves down the page. I understand its a push selection but it seems stuck on the basic format, can anyone help please?

Bev, the bread dough will bang against the sides of the machine especially when the gluten starts to form in your bread. Hello and thanks. One complain that I have noticed in Amazon reviews about this machine is the excessive vibration it produces while kneading the dough. One reviewer even wrote that the machine has fall from the counter a couple times. How's your experience in this regard?
We have never had the bread maker vibrate off of the counter - if the dough recipe was too stiff of a dough, then I could see that happening for sure. As far as bread makers go, we actually prefer Zojirushi bread makers over the Breville in terms of the quality of the finished product. The Zojirushi Home Bakery Virtuoso Plus uses two independent paddles to mix and knead as compared to just one. We think that this makes every step more effecient and creates a better bread loaf as compared to the Breville. I hope this helps!
How is the durability, anyone? I bought a Zoji BBPAC20 and the program broke after 16 mos. I programmed "dough and rise" only and it worked fine for over a year then it started to bake it after dough is rise. I was not aware, picked up the very hot handle and dropped the baking pan. Dented it and now the paddle could not paddle thru the dent part. Of course to fit all these will cost equal to buying a new one. YES. only less than 2 yrs! How expensive!

I have this breadmaker and there are various beeps. The manual doesn’t say what they are for. Can you tell me? For instance I would like to know when the bread is done it’s last rise before baking so I can take it out. Is there a unique beep for that? Hey bushgirl1962, you're right, there is not a beep code list in their manual. For The Custom Loaf bread maker, those beeps are typically indicating that the machine is changing to the next cycle, for example from the knead cycle to the raise #1 cycle. As for the fruit and nut dispenser, it will automatically open in every cycle even if there is nothing in it, you also have time to open the lid and add additional ingredients at this time. I did contact Breville's product specialist support line about the 3 buzzes and they said they would need some more information do distinguish what the buzzing noises are. They did say that you can actually use the "custom" function to create your own cycle where the bread machine will knead, proof, and rise and NOT bake the dough (which is an awesome customizable function of the Custom Loaf machine). The Turcan's Tribe - Cover it with a small pad or towel to protect it and gently hammer the paddle loose. Use pliers to pull it out if need be. Make sure to dislodge any dried dough stuck in there after each usage. Use a couple of wooden toothpicks. NEVER USE METAL! Once clean, lubricate the paddle hole and drive shaft with a drop of oil (or butter) with the tip of your finger to keep it from sticking next time. The paddle hole and hinge must always be kept perfectly clean or you'll have a hard time fitting the paddle over the shaft, or pulling it out next time, the paddle must also always flip easily. 👍

It would be nice if reviewers of any piece of kit could tell us where the implement is manufactured. Many consumers are conscious of country of origin. Regarding paddles, I have no problem with holes in my bread, as long as it's JUST a paddle hole and not a dirty great chunk of bread missing. I've taken to squirting olive oil non-stick spray on the paddle shaft and paddle so it comes out with the loaf and I pull it out cleanly or sometimes with a bit of help from a plastic knife. To my eye this pan isn't mixing too well, as one might expect with a long pan and a single paddle. If the pan's able to be held in bare hands, the pan's too cool. I've found leaving the loaf in the pan makes for a soggy loaf. Lastly, I weigh all my dry ingredients in a large plastic container on scales (my own recipe, about 20 grains and seeds) and put that into the pan which already has measured amount of water in it.
Bought one directly from Breville since we live in a rural area with no high end kitchen stores. The 'custom loaf' bread machine (made in China) arrived with very poor build quality. Dents and poorly fit sheet metal and actually two areas on each side that will cut skin - razor edged. Breville charged us $139 to replace it quickly rather than return the machine in order for them to send out the replacement. Replacement machine arrived smashed and completely unacceptable so now we have two machines that no-one would want on their kitchen counter. It appears that Breville has taken the $139 from our account so they did not honor their own 30 day return policy. We have other Breville items (the toaster is a marvel!) that have been very successful but we are hesitant now to deal with them since we can't seem to get a bread machine from them and now they will not return our phone calls... so; No, we cannot recommend Breville with their very poor customer service. Is it their fault? Yes at this point it is due to their poor handling of this issue. We do not have after a good faith purchase, a Breville bread machine.
After returning the smashed one, we then received one that would not mix the dough - at all! The 'beater' does not turn. Called Breville, the agent said they would send out another when I paid another $139... are these people for real? We now have two junk bread machines for a total of over $400 plus freight. We are done with Breville and so should anyone expecting a quality device and/or fair customer service! Be warned - these people are crooks...

My Breville machine makes so much noise when kneading the dough. Is that normal.

Is the bread pan clicked into place properly? You must get an audible 'CLICK" on both sides when you push it into the machine.

The mixing paddle doesn’t work,it stuck for a few years now
The Turcan's Tribe - Cover it with a small pad or towel to protect it and gently hammer the paddle loose. Use pliers to pull it out if need be. Make sure to dislodge any dried dough stuck in there after each usage. Use a couple of wooden toothpicks. NEVER USE METAL! Once clean, lubricate the paddle hole and drive shaft with a drop of oil (or butter) with the tip of your finger to keep it from sticking next time. The paddle hole and hinge must always be kept perfectly clean or you'll have a hard time fitting the paddle over the shaft, or pulling it out next time, the paddle must also always flip easily. 👍
This machine is nice. Thinking of buying one. However the bread looks flat and hard. I prefer soft, white and fluffy

It would be nice if reviewers of any piece of kit could tell us where the implement is manufactured. Many consumers are conscious of country of origin. Regarding paddles, I have no problem with holes in my bread, as long as it's JUST a paddle hole and not a dirty great chunk of bread missing. I've taken to squirting olive oil non-stick spray on the paddle shaft and paddle so it comes out with the loaf and I pull it out cleanly or sometimes with a bit of help from a plastic knife. To my eye this pan isn't mixing too well, as one might expect with a long pan and a single paddle. If the pan's able to be held in bare hands, the pan's too cool. I've found leaving the loaf in the pan makes for a soggy loaf. Lastly, I weigh all my dry ingredients in a large plastic container on scales (my own recipe, about 20 grains and seeds) and put that into the pan which already has measured amount of water in it.
Bought one directly from Breville since we live in a rural area with no high end kitchen stores. The 'custom loaf' bread machine (made in China) arrived with very poor build quality. Dents and poorly fit sheet metal and actually two areas on each side that will cut skin - razor edged. Breville charged us $139 to replace it quickly rather than return the machine in order for them to send out the replacement. Replacement machine arrived smashed and completely unacceptable so now we have two machines that no-one would want on their kitchen counter. It appears that Breville has taken the $139 from our account so they did not honor their own 30 day return policy. We have other Breville items (the toaster is a marvel!) that have been very successful but we are hesitant now to deal with them since we can't seem to get a bread machine from them and now they will not return our phone calls... so; No, we cannot recommend Breville with their very poor customer service. Is it their fault? Yes at this point it is due to their poor handling of this issue. We do not have after a good faith purchase, a Breville bread machine.
After returning the smashed one, we then received one that would not mix the dough - at all! The 'beater' does not turn. Called Breville, the agent said they would send out another when I paid another $139... are these people for real? We now have two junk bread machines for a total of over $400 plus freight. We are done with Breville and so should anyone expecting a quality device and/or fair customer service! Be warned - these people are crooks...
