Sourdough Bread Start to Finish in Bread Machine

  • Basic Single Loaf Recipe:
    2 c. flour (I prefer bread flour)
    1 tsp. sea salt
    3/4 c. filtered water
    1/2 c. sourdough starter
    Mix all ingredients in bread machine on 'dough' setting. Remove paddle from machine after mixing has ended. Allow to rise/sit for 6-12 hours. Select 'bake' setting and allow to bake. After allowing to cool a little, shake pan up and down to loosen loaf and remove from pan. Slice and enjoy! To store bread, place sliced side down on cutting board or store in plastic wrap. Best enjoyed within 3 days, then turn into bread pudding or croutons.

    Love the tip on pulling the paddle out after mixing but before rising and baking. My paddle is forever getting welded onto the spindle, requiring hours of soaking to get it out. This tip is invaluable 👏👏👏👏👏❤

      Grass fed butter though.... Not grain fed with high omega 6 but probably still better than vegetable seek oils

    Made this recipe again after I made it the day before. The only adjustment I did was to bake it twice (30 mins then additional 15 mins). It’s really effortless and I’m loving this! Thanks for the recipe and video!

    Last night around midnight I decided to pull out my potatoe flake started and make my bread in my bread maker the way you recomendé and it was ready to bake this morning it was wonderful! I love using my bread maker, not so messy! turned out awesome.

    Thank you so much for sharing! Even though I have a bread maker, I had no idea that I could make my own healthy sourdough bread in it! I know that sourdough bread is healthier because of the fermentation process but store-bought versions are loaded with sodium and other non-gut friendly stuff. The idea of traditional sourdough bread-making at home overwhelmed me when I saw numerous RUclips videos and realized how complex and committed it can be. But then, I came across your video and was overjoyed! I just made my first loaf using your recipe and nothing could be easier with such great results! It is yummy and the beautiful aroma of the starter makes it hard to distinguish it from the store-bought brands. The best part? No oils, sugars, butter, or yeast, and I can regulate the amount of sodium without giving up taste!! It took forever to find you, but it was well worth the wait. I am happy that I did not give up my search!!! Thank you again!

    Thank you so much for this recipe. I've made it as per your recipe and with "mix ins" 1/2 cup raisins and 1 tsp ground cinnamon. Both were perfect. My machine doesn't have a "Bake Only" setting (only 10 minutes) so I removed the dough, placed it on parchment paper, and let it rise overnight. Then I baked it in the oven in the morning at 375°F for 55 minutes. 😊

    Hi! Happy November! 🤗 I was so excited to see this video upon my rising! While awaiting this one, I’ve watched your other videos many times & took a chance on baking my sourdough bread in my bread machine, but I selected Artisan for crunchy crust on the outside & chewy soft bread on the inside! WE LOVE IT!!! 💝 I left paddle in & each attempt turned out great!!!
    Now, I’ll follow your tips, using 1 cup or 1.5 cups, to see if I get a taller loaf. I’m nervous about removing the paddle lol, but I’ll give it a go since I’ve been having fun experimenting with baking bread thus far! Thank you for all of your help!!! I can hardly believe I STILL HAVE MY STARTER in my fridge, going strong!!! 💪 😍

    Thanks for the video. I mixed my dough in a stand mixer using the dough hook allowed it it sit for 8 hours and then cooked it for 1 hour using the bake only function on my bread maker - really pleased with the results

    So today I baked my first Sourdough loaf and I did it following your recipe in the bread machine. It was also day 6 of my first starter and it was bubbling like crazy.My loaf ended up about an inch higher than yours but exactly the same colour, so I put it in the oven for 10 minutes at 400f. I haven’t tried it yet its still cooling down, but I have no doubt it will be great, thanks for the recipe.

      Good morning! Hope you and you’re family are well during these “crazy times” we are all going through. The sourdough loaf was a complete success!! It tasted great! It did shrink a bit but that was my mistake. I left it in the bread maker for 13 hours ( I forgot all about it)

      More moisture in the dough leads to bigger holes. Oven spring also contributes when baking without a form pan at high temperature with steam.

    If you go to Shamrock or another restaurant supply store you can buy European butter. European butter has less water than pure butter that we buy in America. And it taste really creamy.

    Well it worked!!i just substituted sea salt for iodine salt just simply because iodine salt is same price or maybe cheaper but main reason because I live with 3 females and they need the iodine..and far as slicing I use a true bread knife a (lame) bread turned out good but not my usual sourdough bread loaf..I’ll probably do again…

    Thank you for sharing this recipe, and the very clear video. The starter I'm using came from a Bake with Jack video, and uses rye flour and I use spring water. I have a Mini Zojirushi bread machine that makes one pound loaves. There isn't a bake only cycle, but I managed to sort out how I could accomplish a one-hour bake. I wish I could share a picture. The loaf rose higher than yours, and tasted delicious. I might try adding closer to 3/4 cups of starter, or a more generous 1/2 cup.

      @@claranumberone Can you set the machine to a 1.5 loaf size? I followed the proportions above, turned the machine on the basic setting, and let it go through the rest and knead cycle. At that point, turn off the machine, and remove the paddle. Leave the dough in the machine for an hour or two, so it isn't too sticky to handle. At some point, I do transfer the contents to a bowl, cover the bowl with a damp tea towel, and let it finish rising in a draft-free spot. Check your manual for how long the final rise and bake takes (mine is about 2 hours ). Start the basic bread cycle with the paddle in (important!), and when it gets to the final rise and bake, remove the paddle and add the dough back. Mine bakes for about an hour. My starter is based on the one demonstrated by Bake with Jack (25 grams of rye flour and 25 grams of water at 95 degrees F.). By day 4, it was a bubbly starter

    Thanks for your clear instructions. I have my dough with 1 c sourdough starter rising now. Will wait for 6 hours then try the bake cycle. So exciting. Have you ever used a thermometer to check if it's done? I check mine when I oven bake to make sure the loaves are at least at 190 F.

    If I wanted a darker crust could I add 10 min to the bake time? Also my bread maker has a "dough" and an "artisan dough" setting do you know which is better?

      I do not know which dough setting is better unfortunately. You can try adding some time, but usually the darker crust comes from higher temperatures that cannot always be achieved in a bread machine.

    I really want to try this. However, I do have a dough setting, so that part I can do, but I do not have a bake only setting. Any ideas. If I stop it or unplug it to let it rise for the long rise, I have to start any cycle from the beginning and it will go through a regular entire cycle.

      After you are done with the kneading cycles, just take the dough out and shape it into a loaf pan. Let it do the long rise there and then bake in the oven at 350 for about 40 minutes. I do have another video on using the machine to do the kneading and then baking this way in the oven.

    This is what I was looking for. I am just starting making my sourdough starter and although I want to make sourdough by hand I doubt that I will be able to make it for everyday. For days when I want to use my machine I would like to use the discarded starter from the feeds instead of commercial yeast.
    Yes I know it is not like the proper sourdough bread but I wouldn't expect it too. Otherwise why go through the process

    thanks for the video. I have been trying to learn how to use the starter now that its mature. Is the norm for a loaf of bread 1/2 cup of starter?

    first time using a bread maker with the step at around 3;30 about how long does it kneed the dough for?

    My machine is new, therefore I didn’t know there was more to the dough cycle, so I turned it off and took off paddle after it stopped kneading, I also turned off machine. What do I do now since it doesn’t have the paddle to start over nor the heat to help it rise?

    I make most of my bread in a bread machine in the summer as we are off grid and it's simple and free (baked with the solar power) and a real time saver. I have always used yeast but wondered if sour dough bread could be made in the bread maker, thank you for this video. My bread maker doesn't have a bake only option but you have encouraged me to try a few settings and see if I can make it work. Also mine is a sideways loaf pan so I could probably make a larger loaf, is there a ratio I can use to know how much sourdough starter verses flour? For instance my recipe is usually 4 c. flour, 1 1/2 c. water, 1 1/2 tsp salt and 1 1/2 tsp. yeast. If you could give me some tips in converting it that would be much appreciated.

    Would i be able to add yeast to make it rise more? My bread machine can make a two pound loaf. I think I need to double the recipe, how much yeast should I add for double the recipe

    You can make Einkorn bread with pkg yeast in bread machine without a custom setting as long as there is a bake button.
    1 1/2 cut warm water
    2 Tbsp Oil or butter
    4 c Einkorn all purpose flour
    1 tsp salt
    1 pkg yeast. make well on top of flour pour in yeast cover with some flour.
    set for basic bread setting let mix 10 minutes
    turn off bread machine and let rise 60 min.
    turn on bread machine and press bake cycle and bake till browned. 60 or so mon.
    this makes a tall loaf for sandwich slices
