Mint is abundant in summer and some of the best quality comes during summers. So this makes it the best time to dry mint and use it for months. There are 2 common ways to dry mint at home. One is natural air-dried which can be done under a shade on a sunny day or under a fan in a room.
The other way is to do it in a microwave. In my experience, natural drying gives a stronger flavour in dried mint as compared to the one done in a microwave. Also, the colour of the air-dried mint is more even and lighter green whereas the other is dark, deeper green to black and sometimes dark brownish.
I recommend using a microwave to dry herbs when you need them immediately and do not have the time, as sir drying can take anywhere from a day to 2 days(sometimes more). Air drying depends upon how much heat & humidity is in the air.

@@avanipatel6508 after plucking the leaves put the stems in a glass of water. Keep the glass indoors at a semi lighted space without disturbing for 5 to 10 days. After 5 days observe if small roots have grown through the glass. You can add water if water evaporates. Sometimes leaves too start growing. Now take a planter pot with soil and water the soil till it is pliable and soft . Now just bury the stems end one by one with an inch gap. Keep in a well lit place but away from direct sunlight for 7 days. Then keep in sunlight. Within one month you will be able to get leaves. Always cut/trim the upper part of the stems or pluck only leaves. In this way the plant stays for years.

Air drying is healthy all natural vitamins are not lost and retains the mint taste, in microwave only looks wise it is more green but in high heat all health benefits of mint are lost, its ok for hotel business point.

Best procedure for microwave oven is to run for 30 seconds in microwave, leave it out for two minutes after stirring, let it cool, then again microwave for thirty seconds and leave it out for two minutes. This way run in microwave for six to seven times. For later heating from third time to end, reduce the microwave timing to 25, 20, 15, 10 till the leaves become crisp. The idea is that leaves should not get cooked but just enough heat to dry on its own.
