I use a coffee filter for mine - works great. And it does need oxygen (like kombucha) but it forms a pellicle on top so it sort of self protects while it is working.
Yes. I have two recipes on my site one is an accelerated version using some vodka in it, the alcohol makes it work in half the time and is the best for people that have mold and Kahm yeast.
