Some will say non distilled vinegars should read 3.5 pH to equal 5% while others will say 2.5 pH. Some say that distilled vinegars should read 2.5 while non distilled read 3.5. Others quote a general acidity of 2-3 pH to equal 5%. Thus I will still stand by a pH of no higher than 3.5 but can be as low as 2.5.
Have you made rice vinegar? I tried it once with someone else's directions, and it didn't work for me. I'd love to see reliable directions for that. I would rather make my vinegar directly from rice and not rice wine.
I had something happen to me at least 20 years ago if not more. A friend gave me a couple of bushels of apples. We couldn't eat them all. I didn't have any way or know how to preserve them. My husband decided to make wine. I don't remember how much of what we used but I cut the apples into one of those big white buckets. I put in a small box of candied ginger. I put in sugar and yeast. I finished up with water. I stirred it and put the lid on very tight. I put it in my pantry. We forgot about it. 10 years later my husband was looking for something.and asked me what was in the bucket. I said, that's the wine we was making.. we opened it. Not wine. But it was the best tasting vinegar I had ever tasted. I don't know what happened. But I know that I can never make it exactly like that again.😂😂😂😂

I taught a 6-week homeschool co-op class on Pine. One of the activities we did was to make Pine Cleaner. Instead of using store vinegar, we made pine vinegar! Smelled so much better, too!

Azure Standard had a bumper crop of pears. They had them on sale, $42 for 5 cases(100 lbs). So I canned all different recipes of pears and now I’m making pear vinegar, first time. Thank You Heidi for these videos to give me the confidence to use the whole fruit and not waste anything.
I am making vinegar ( or a mess, maybe) from the peeling from Azure pears! I didn't know that I had to stir it...and there are moldy things on top of it.
It made me feel better about making vinegar when you said your first attempt failed. My first attempt failed and i haven't tried again. I believe I will this year. Thank you for being honest with your success and failures. When it doesn't work out we have to learn from that.
I do not recall saying my first attempt failed (pretty sure it turned out good) but I have had some failures through the years due to using frozen fruit or not keeping it stored in and air tight jar thus causing it to reverse itself. There will always be failures but that is how we learn.
My first attempt was a big success....the second, third, and now fourth not so much. I know what vinegar is not supposed to smell like after those batches!
We always have onion skin vinegar on hand. It is the BEST flavoring for savory items. I still tend to get mold on the top of my vinegars....I swear I'm stirring it enough, but I guess it's just the way it is. I just scrape it off - no harm done. Although my onion skin vinegar typically doesn't get mold. I purchased 2 different sizes of those flip top bottles using your link. I LOVE THEM! Thank you for producing yet another vinegar video. @@carmenbella9104 Well....I don't have a recipe. I just dumped some onion skins in a jar and put in some starter and a little sugar and some water and let it sit. Lately I haven't been using the fabric top, but using a screw top on the mason jar and it's more like a strong ferment...that eventually turns to vinegar. I just keep adding water and sugar to it when I use some. But I would say try both ways. Experiment and have fun!
I have discovered that different houses have different microorganisms. You're probably not doing anything wrong. Some places just cause mold a lot faster than others.

Heidi, you taught me how to make vinegar a few years ago. Now I usually have vinegars percolating in the kitchen. Two recently finished are a little jar of black currant vinegar and a jar of fig vinegar. Both were made with dried fruit from who knows when. Both of those were then forgotten in a corner and underwent some dehydration, so they are intensely flavored. 😍
I make my own ACV....... Now i'm looking to make some other kinds..... thank you for your time in making this video 🌹 I make mine in a round, tall terracotta breadbin that I bought in a charity shop...... i have a side plate that covers the fruit on the inside and a large plate that fits perfectly on the top, on top of a square of cheesecloth/muslin to aeriate and stop the fruit flies. I only use a wooden spoon to stir and usually decant after about 3 to 4 months......always with a chunk of the 'mother'.
I used over fermented kombucha tea (turned to vinegar) to use as a hair rinse almost daily. My thin hair loves it & it is so refreshing on my scalp. My husband no longer has dandruff since using the kombucha vinegar hair rinse. Thanks for sharing your experience & knowledge, Heidi! 🤗🇨🇦
I’ve made so much vinegar since watching your videos of years ago. This last summer, I made vinegar out of the pulp that was left in the steam juicer from the grape juice. I also did it from the pulp that was left when I made crab apple jelly. Works great. the crabapple jelly mase a beautiful rose colored vinegar
I've had the most success with apple scrap vinegar. I did one actual ACV, though. I take a teaspoon or so twice a day as I am adding it to my hounds' water. We also use it to wash fruit.

I like citrus vinegar to use as a hair rinse. It removes any soap residue and softens my hair enough to easily comb it with a wide tooth comb. I love citrus scents.
Leave city water out in an open jar, covered, overnight. This allows the gases to evaporate out of the water. Cl, Fl, etc. Also, of you have a water heater, it seems to me the heated water has forced the gases out of the water, so drinking that is better than drinking the cold water side. Now, me make vinegar too.

Since the decline in quality of Braggs vinegar Its nice to have another option since I switch to Fairchild's brand incase they ever follow suite. Your jar covers are adorable. Last time I made vinegar I put too much sugar in it. It's vinegar but it's sweet, tastes good but sweet. I've enjoyed all your vides and I've learned a lot.
As far as subtitles on my videos, youtube usually provides that option in the closed captions (CC) but I have no control over what videos they will allow subtitles or language translations, every now and then there is one they prevent it.
I recently had to throw out some orange peel vinegar and I think it was slimy didn't bubble well because it was in a quart jar with too many peels. At the time I thought that was the problem. I appreciate this video. It answered so many questions.
Thank you! Now I understand what had happened to the pineapple vinegar I had attempted to make, I mistakenly didn't cover it tightly after it was completed and it had molded {was not Kham yeast}. I've been making 'soda-juice' fermentaiton with frozen mixed berries & dried hibiscus flowers. It's been so tasty and my family loves it. I only leave it a week and I could see how leaving it longer could turn into vinegar. I am experimenting with a fresh oranges slices but it seems to be taking longer.
What is your base for the sodas? I make ginger bug sodas with tea/juice and fruit. First ferment is with all the fruit/tea in, then I strain and bottle into old kombucha bottles to start the carbonation. My favorite flavors have been mango/orange/pineapple (that one really carbonates), cherry chamomile, turmeric lime/lemon, and blueberry green tea. I’ve been wanting to try it with hibiscus for awhile now!

YES! I bought some also. Pear are also sooo good dehydrated - we like them better than apples to snack on!

Leave city water out in an open jar, covered, overnight. This allows the gases to evaporate out of the water. Cl, Fl, etc. Also, of you have a water heater, it seems to me the heated water has forced the gases out of the water, so drinking that is better than drinking the cold water side. Now, me make vinegar too.
I was surprised she didn’t mention letting it gas off overnight.

Im making my apple vinegar,will b done in a week ive learned so much from you,Ty....i will be getting my cosori dehydrator this Friday, cant wait. My other one finally died,i had it for 10 years. Glad it will be metal inside not plastic. Trying to stay away from that,as you know. Great show!

I really enjoyed this! I never thought of making my own vinegars. Now that is is more difficult to get a good vinegar with the mother in it at the store, I'm more than willing to try to make some at home. I look forward to watching more of your videos!

ACV is my main vinegar for health. Today I made a red wine vinegar for salad dressing use. The citrus vinegars always brewing for cleaning 👌

you are so amazing...Thank you for sharing this knowledge, I never thought about making my own vinegar. I use it to manage my diabetes and drink every day for gut health. Since the decline in quality of Braggs vinegar Its nice to have another option since I switch to Fairchild's brand incase they ever follow suite. Beside I never thought of all the different types of vinegar one could make. Its exciting. The information is exciting.

My first try l made an apple /carrot vinegar that ended up with kahm yeast, no big deal…it was perfect after straining. I’m going to make orange peel vinegar for cleaning next. Can’t wait! Thx Heidi!

Your jar covers are adorable. Last time I made vinegar I put too much sugar in it. It's vinegar but it's sweet, tastes good but sweet. I've enjoyed all your vides and I've learned a lot.

I recently had to throw out some orange peel vinegar and I think it was slimy didn't bubble well because it was in a quart jar with too many peels. At the time I thought that was the problem. I appreciate this video. It answered so many questions.

Thank you! Now I understand what had happened to the pineapple vinegar I had attempted to make, I mistakenly didn't cover it tightly after it was completed and it had molded {was not Kham yeast}. I am attempting vinegar again with strawberry hulls & I'll be sure to cap it tightly this time when it's finished!
I'm also going to try & make Turkey Tail Mushroom vinegar because I doubt that particular mushroom wouldn't get mooshy.
I feel as though the angelic angel of canning has swoon me lately & I’m loving every minute of it. Thank you so much for sharing such amazing content as well as demonstrating! Just started 3 quarts of apple vinegar yesterday from scraps which I used honey for medicinal purposes & 3 quarts of orange vinegar today from mostly peels with organic turbinado cane sugar for cleaning purposes. I've been making 'soda-juice' fermentaiton with frozen mixed berries & dried hibiscus flowers. It's been so tasty and my family loves it. I only leave it a week and I could see how leaving it longer could turn into vinegar. I am experimenting with a fresh oranges slices but it seems to be taking longer.
What is your base for the sodas? I make ginger bug sodas with tea/juice and fruit. First ferment is with all the fruit/tea in, then I strain and bottle into old kombucha bottles to start the carbonation.
My favorite flavors have been mango/orange/pineapple (that one really carbonates), cherry chamomile, turmeric lime/lemon, and blueberry green tea. I’ve been wanting to try it with hibiscus for awhile now!
