Did you know, during dwaparyug, before Gajanan was born, sindhurasur tried to kidnap mata Parvati. Mata Parvati worshipped Ganpati who came back as his son mayuresh from tretayug. He and lord shiva saved Parvati, after which she asked mayuresh to come back to her as her son. That is how Gajanan was born.
It means in dwaparyug only he got elephant head. Before that it was not.

He is highly powerful and need strict rules to be followed on daily basis to pray or please him. Missing of any ritual or any failure might result in drastic outcomes. You need a dedicated member of a family to look after this idol always. You just cannot ignore any aspect of it.

I think these all stories of puranas indicating something else. Every devata have their asuras as their son or their evil form which are created from their vikaars (anger, lust, envy etc.) and to fight with them they are again taking the help of the respective devatas. If you think like you are the whole sristi, you created a form of yourself within yourself from all the vikaars you have and to fight with them you are worshiping the devi or devatas, doing sadhanas and all to become a better human being again i.e to balance the sristi again. And the circle goes on for every human being.
