I'd love to see DJ BBQ's take on classic solyanka. It's quite complicated dish as it should feature 5 types of different meats including kidneys (and you need to change water while boiling them a few times) and it takes a lot of prep time cutting everything up. But properly done solyanka is the best tasting soup by far! I think it'd be right up your alley.

My favorite stewy dish is pumpkin coconut curry with fresh kefir leaves, and freshly ground galangal bark simmered in with roasted cauliflower, sweet potato, potato, carrots, and onion, with either quinoa or brown rice on top. It's so f-in bomb and the galangal and kefir make such a difference in the depth of flavor!
A bird pooped in my yard and planted an amazing veggie vine that produced 30 pound squash/pumpkin things that are AMAZING. I found I can sub it for anything squash, pumpkin, or sweet potato, and I am ALL ABOUT trying this recipe next. With 100+ pounds of squash to deal with, I need a TON of recipes to try!

Ox tail stew, a late friend of my dads in Malaysia made it, being kind of a fusion cook. Really peppery really rich meat falling off the bone, some baguette bread to sweep up the thick meaty sauce. Man it was heaven
Here in Kentucky we love burgoo. Its a stew made out of a mix of hickory smoked pork, chicken, mutton and game meats, with a healthy dose of vegetables and a side of cornbread. You gotta try it.
I don't know if you are still reading comments on these old videos, but I'm from Bosnia, a small country in southeastern Europe, and our local stew is called Bosanski lonac. It's quite simple but very delicious, and uses a mix of meats. You should research it a little, very interesting. :)
I am from Dublin, and our local soupy dish is called Coddle. If you are still cooking, I urge you to look up its origin and try to cook it, it is easy but very tasty.
Hey Christian, Here at the North sea in Germany "Grünkohl" is the big deal. It's kind of a long time cooked cale stew with two kinds of sausage (Pinkel And Kochwurst) that you will only find here in northern germany. That's very delicous!!
There's something like a stew here in Bavaria, it's called "Pichelsteiner". Made with kinda chunk sized pieces of beef and quite a load of vegetables like carrots, potatos and leek. Also very tasty with a hint of chilli in there.

I would love to see DJ BBQ do corned beef and cabbage, shepherds pie or lamb chili. I know he doesn't do desserts too often if at all, but it would be great to see a dessert bread or pie from him. He's one of my favorites and he's so fun to watch!
In Portugal we have something called a feijoada, its a bean kinda stew i guess, with some diferente choriços, its probably one of the most known dishes of our country, it could be with meat, like pork, or it can be fish as well, really delicious
I LOVE your vegetarian recipes! I make a similar chili but instead of black beans, I use lentils and instead of mixing sweet potato in the chili i put baked, mashed sweet potato at the bottom of the bowl and pile the lentil chili on top :)

Well, since you asked. I'm from Finland and the classic finnish stew would be the Karelian Stew. You usually have mashed potato with it. It's a simple dish with not many ingredients. I personally prefer mashed potato/sweet potato/rutabaga instead of just potato mash. You of course use milk with finely chopped onion (heat the milk up before adding) as liquid with the mash and a knob of butter for extra flavor. And maybe some steamed broccoli to go along with it. I don't personally do it all that often and I prefer punchier/hotter flavors so I have my own personal variation of it which I also often kind of just wing it and don't follow any specific recipe.
In argentina we have osobusco and locro an mondongo Osobuco are shanks I think, but its sometime cooked as a braise. Now locro and mondongo are the real thing. You got corn, beans, potato, chorizo, pumpkin, chili powder, paprika in locro And we make mondongo with cow's stomach, sound gross, but its pretty good.
i sure hope this is a subtle hint that i may or may not see some bulgarian cousine in the near future. that would be super awesome, since i´ve been waiting for this for way longer than i dare to admit :D
Looks delicious. I make chilli all the time, but I need to make this veggie one now! I wish I could point you towards an Australian stew/gumbo/chilli type dish, but I can't think of any. The closest I could think of would be the Australian Meat Pie, which is basically a version of an English one... could do a Kangaroo pie though, Kangaroo meat is fantastic, lean meat with a tonne of flavour.

Great recipe DJ. I recommend a 2-3 inch cast iron skillet for wood chips. Works great with gas BBQ grills and has no cleanup.

I'd wager that a big tablespoon of smoked paprika would work on the sweet potatoes instead of the dry mix he mentioned.
