I like the "non-gradable" idea for colours as adjectives.
I think it also applies to shapes :
"This table is round" = 这张桌子是圆的
( Can't usually say 这张桌子很圆 )
Besides colours and shapes, probably this concept also applies to other such categories.

这本书是红色的 uses a 是…的 construction.
But this is different from the "usual" 是…的 construction, which describes the manner in which something was done :
这本书是在中国买的 = "This book was bought in China"
