    I begin by heating a skillet and sautéing cumin seeds and curry leaves in oil until they become fragrant. Next, I add onions, tomato sauce, and ginger garlic paste, allowing them to cook until they soften.
    Then, I mix in the ground spices followed by cubed eggplant, salt, and water. Once the eggplant is tender, I mash it and finish the dish with a sprinkle of sesame seeds and a garnish of fresh coriander.
    Adding sesame seeds to Baingan Bharta is my unique twist to enhance both the texture and nutrition.
    The sesame seeds provide a delicate crunch and a rich nuttiness that complements the earthy flavors of the roasted eggplant. This addition is particularly beneficial for vegan diets, which can sometimes be lower in protein.I always aim to boost the protein content in every vegan recipe I create, ensuring that each dish is not only delicious but also nutritionally balanced.
