    Serves 6
    Ingredients:
    9 cups shredded potatoes (737 g)
    1 medium onion, chopped (170 g)
    1 Tbsp garlic powder
    1 Tbsp smoked paprika
    Fresh greens or dried herbs
    Directions:
    1.) Preheat oven to 350 degrees. Add all the ingredients except the fresh or dried herbs in a 9-inch pan (either a silicone or springform).
    2.) Pack the mixture gently into the pan, making an even layer.
    3.) Bake for thirty minutes. Carefully remove the sides of the springform pan or flip the Rösti onto parchment paper if using a silicone pan.
    4.) Turn the oven temperature to 400 degrees and bake for ten more minutes.
    5.) Remove the pan from the oven and top with fresh greens or dried herbs.
    Serve this with your favorite condiment.

    Oh I ate rosti in Germany and loved it! Thanks for making it without all of the butter! I also want to say I really appreciate these 10-20 minute videos. So many of my favorite RUclipsrs now have either shorts or hourlong meandering chats. I also appreciate the concise recipes on your website. So many others begin with long repetitive paragraphs that I’m sure suit some Google algorithm but are really annoying. And of course the membership only live cooking classes are wonderful. You’re the best!

    Love super easy and love potatoes 💓
    It's hard to find shredded frozen potatoes in my area. Do you have to do anything special when using fresh? Squeeze out water? Precook before shredding? Thank you!

      Usually it’s not super watery when you shred them. We don’t precook them, it’ll have a total bake time of 40 mins which is long enough to make sure they are done

    I’ve seen a technique of spritzing the surface of hash browns with lemon juice to make the surface more crispy. I wonder if that would work well here for the last ten minutes of cooking after removal from the pan.

    Roasti in Swtitzerland is usually served as a side dish to Schnitzle (pork chops) or anything like that. It is made without onion by the way, only salt and butter and cooked on top of the stove in a frying pan.

      @@TheJaroudiFamily I know that and only wanted to point out how this recipe is actually used in Switzerland since I am plant based myself. By the way, I do not like salty food and never have, but salt free food is very tasteless and flat no matter how many other spices you use, I therefore lightly salt my food with Himalayan salt, anything in excess is bad for you like everything else. I am 76 and will be soon 77, I am on no meds by the way and I am still very active, I was plant based when it wasn’t popular and was called a health nut! 😊

    Now, if you cam come up with a way to utilize a raclette grill in a whole food plant based way...the grill is used to melt cheese under a little broiler. Then you pour/scrape the cheese onto grilled veggies and fruit. I think adding this routine on the table to go along with thre ther fruits and vegetables with a meltable vegan cheese relacement would be a great way to share a meal together.

      no, the potato should be raw shredded - we like using russet potatoes

    Looks yummy. Can I bake it in a normal oven dish and not turn it over? and bake it for 30 or 40minutes?

      Not sure as I have only made it this way. It may not crisp up the same.

    I just bought extra potatoes that I will shred. Russets or gold potatoes preferred? I have close to a 9 inch, which is not non-stick, but I will line bottom with parchment. What herbs do you add?

    Does it fall apart when you cut it into wedges or is it crispy enough to hold together?

      It is a bit delicate but holds up pretty well.

    Unfortunately living in Europe ,where there's no Frozen hashbrown shredded potatoes, what's the best way to make this using high starch potaoes?

      Shredding russet potatoes is the way I would go.

    To make homemade hash do you just shave russet potatoes?
    Will this keep good in the fridge for a while?

      Yes - if your planning on not having this the day you make it, you’ll want to add it back to the oven for about ten mins to crisp them up again

    I am making this now. However my 9 cups of shredded russets did not fit in my spring form pan. Had to use a silicone and a spring form pan. I swore it measured 9 inches, but hubby said it was not.

      Yup it has to be a 9 in pan to work.

      @TheJaroudiFamily When I first measured the pan, it looked like the measurement was 9 inches, but when I rechecked, the numbers on the ruler were distorted at the angle and it was really 6. However, when I used the 9 inch silicone pan, it was still too much, and I added the rest to the small spring form pan. Also, it stuck to the silicone when I flipped using parchment even after sitting a few minutes. I was able to get it back together on a sheet lined with parchment and baked additional time, which required more than 10 minutes. I put the whole thing in the fridge overnight and it seems to be holding together better. I think the secret with the silicone is to let it thoroughly cool, maybe overnight in the refrigerator before attempting to flip.
