My family is from Guyana and my Grandmother and Grandfather helped start the Guyanese Association in Ottawa, when they came to Canada. She was known for her traditional Guyanese cooking and used to sell it at festivals all over. This is how she made her Patties (except she had the traditional individual metal baking cups and she added peas and carrots). When she passed, the ladies of the Guyanese Association of Ottawa made all of her recipes for the funeral. I watch your videos and cry happy tears because they remind me so much of how she used to cook. I watched the video of your mother making roti and it could have been her hands in that video. Thank you for this.

Thanks a ton for this recipe. It's really good. Clear instructions in both video and written are very very good. The crust recipe is perfect. I do need to tweak seasoning for the meat to make it a tad bit sweeter n spicy. I'll make another batch this weekend. Perfect for my lunch at work.Thanks again for this great recipe.😀👍👍👍

Thank you for posting this recipe. I did exactly as your recipe and it was a big hit at the party. Some of my friends add ketchup to the filling which is also good, but I like this recipe better.

Curry and tumeric is added when making cheeserolls, not Guyanese patties.

I love your recipe for the Guyanese beef patties. I also love the recipe for the turkey potato puffs but since I don't eat turkey I will substitute it with the ground beef. You can also add some Parmesan cheese for a cheesy crust. Also add some mustard powder to enhance the cheesy flavor. It's lovely.

I was confused because the recipe calls for 2/3 cups ice water. But from the video it seems as though you did not use all of the water, but there's no firm explanation as to do that or just add all of the water. I pretty much put all of the 2/3 cup of water and the dough turned out wet looking unlike your dough which looked dry if you know what I mean. Maybe put a note on just using enough water or something like that in the recipe?

No oil needed because the dough has so much fat in it.
my dad is Guyanese so I used to love this as a child. I'm a vegan now so I will follow your recipe using veggie crumbles instead. thanks for the great with video!

Can you give any tips on how to keep your party from sticking to the pan. It may be because I use a cupcake pan but I would really appreciate some pointers
It shouldn't stick because of the fat that already in the dough.

You made it looked so easy to do,,, one question tho... i see u just used flour and butter/shortening without adding salt or baking powder,,is that necessary?? the baking powder,, because i see some people add a little baking powder..but i don't know if i should add it.. i just want it to come nice and flaky.. the crust...?!!
Hi Ashley, baking powder is not normally used in pastry. The butter and shortening is what makes a flaky crust. Be sure to use chilled butter and shortening, don't overwork the dough and to chill it before rolling it out.

Baking powder is used to provide "Rise' as in a buttermilk biscuit. Shortening provides that mouth watering flakiness
Ashley Balgobin she's making pastry so you wouldn't add baking powder but I wondered about the salt. Would make it taste rather Bland without it

I didn't. The pastry has enough fat so it won't stick.

Liquid ingredients (paag)
2 cups of white sugar
2 cups of water
1 can of evaporated milk (carnation milk)
1 cup of full cream milk (regular gallon milk)
Put on medium heat and let it boil
After it comes to a boil add
1/2 tsp of Elychee (ground cardamon)
Stir well, and lower the heat to the lowest setting
Dry ingredients
After the milk is done and is sitting on a low heat
Grab a wide pot on medium heat and add
1 cup of ghee (clarified butter)
Then add 1/2 cup of raisins
Cook the raisins in the ghee for about 7 minutes until the start to sizzle
Lower the heat to in between low and medium
Then add
3 cups of flour or 2 cups of cream of wheat.
Mix well to mix with ghee and raisins and cook for 15 mins.
After the 15 mins, Turn the heat up to medium and slowly add the paag milk mixture, mix well and allow the liquids to cook off, then add some more, cook out the liquids, keep adding in small batches and cooking out the liquids until all the paag is done, cook until all the liquid has evaporated and the parsad becomes fluffy and hard to turn...
Dish out and serve (serves 4-6)

No scallions/ green onion like that. If you add it should be well cooked
You need some stock. My family included a tiny bit of peas and carrots. A really small amount.
Guyanese patties are not supposed to spicy, like what some people are saying, add this and that. This isnt Jamaican patties. Guyanese patties were originally like small British small meat pies, and they even used to even call them meat pies, A old lady once told me.
