I've never in my life wanted to bite into a chicken leg like I do while watching these masters batter up and then deep fry. Not once but twice. Absolutely tantalizing to the senses because one could imagine just how crispy that chicken is. Thank you for making an ordinary meat look so amazing.
It's the double fry method: first pot for frying at a lower temperature (cooks the inside and keeps it moist) and the second pot is at a higher temperature for a short second fry to make the outside crispy.

I drive right across the Potomac River into Western Maryland town of McCoole there's a convenience shop service station that serves Grandma's Southern Fried Chicken. They deep fried small whole capons that are to die for and there regular fried chicken is the bomb!!!
It is very easy to perfectly cook a whole deep fried chicken, there are few things you need to do to get it perfect every single time. First, the oil must be hot enough. If you're not heating the oil hot enough, it's not going to work properly, but temperature control is very easy, just need a little patience, let it heat up enough. Second, do not overwhelm the oil. The more chicken you add at once, the more the temperature of the oil is going to drop. So don't add too much chicken at once relative to the volume of hot oil. And third, provided you keep the oil hot enough, it's simply a matter of cooking for the right amount of time. Fried chicken is VERY easy to cook perfectly, one of the easiest things probably. Where people struggle is not letting the oil heat up enough, or overloading it.

I am classically trained in French technique and have worked in fine dinning for half a decade. Iv never attempted to fry a whole bird and never worked any where that had fried chicken. I agree its all about right temp and right cooking vessel. timing would be a trial and error thing for me.

It really does look tasty but I like my chicken a bit more well done. I think I might fire up the turkey fryer and dropping some chicken. I especially like that they use two different temperature oils. It's how french fries should be done but most places don't do it that way
@@zenastronomy two different temperatures. Korean fried chicken is always almost fried twice. Once at a lower temp to set the batter and cook it, then it goes into a higher temp fry for getting it really crispy and well done.

Yes! The oil temperature in the first cauldron is LOWER so the chicken can cook. The oil in the second cauldron is much HIGHER for the chicken to finish cooking and to get its crispy/golden skin color. This is called twice-fried or double-fry chicken.

The seasoning is in that buttermilk brine.
I think the flour came pre-seasoned. You can see lots of little peppery-looking flecks. Probably already salted too.
